Good to see the method of working in the oil, onion etc to make the top layer shiny and non stick like. I suggest.. look at other videos on making iron skillets and pans like these.. To make it shiny and non sticky...The users put flax seed oil and than wipe it away and put the iron utensil in an oven for an hour under 260 degrees C. Let it cool in the oven for 1 hour.Then wash the iron utensil, dry by putting on an stove for 2 mins...Apply Flax oil, wipe off and heat in oven....repeat the same process again and again for 5 to 6 times. I guess those who do not have an over can leave it on the stove at medium heat etc (??)..have not tried this..But... The explanation is the oil and heat makes the top layer smooth as non stick! I guess if u cannot get flax seed oil one can use any thick cooking oil..Also if the "tava" is too thick (ideal thickness is less than 5mm thick..but not too thin either which will burn Thosai..but can be used for Chapatti etc)..I guess one has to learn the heat level and time before getting even cooking on Thosai...Becausevthe burner is at the centre the central area becomes too hot quickly.. and if the edges are less optimal..than the Tosai will not be evenly cooked)..one has to learn to wait for the heat to spread the whole iron surface and than slowly reduce the flame to "simmer" to maintain an overall even temperature.. but high enough temperature to prevent burning just in the centre!...I.e heat must be the same across the edge to centre. ALSO..the amount of iron getting into food is to be limited by doing these heat and wash dry method...by some how preventing the top layer of iron from easily transferring into food as much as possible.
Super hard work in the preparation process. Maintenance is very important. This reminds me our house Iron ironbox which was from my grandfathers time. Those time no easy electroplating facility. But I used to clean it like this abd use coal to iron white cloths. Iron is more healthy and nutritious than non stick.

@@Chiu_Hindusthani I guess reasonable Thosai Kal..or "Tawa" diameter is about 30cm...a bigger one gets a bigger thodai but often the center with the most heat need to have changing the flame up and down to even the heat...which is troublesome..but quite reasonable as once an optimal temperature is reached (with batter and oil cloth to smear on the Iron plate is ready at all times)..its just maintaining the temperature even as possible to get a nice roast for Masala Thosai etc
