And I think it was the French, if I'm not mistaken, were kinda taking them captive and chopping off those exact two fingers they used to pull the bow string, and then showing the V sign back at them to mock them as if to say "look, we still have those. Do you?" I hope I didn't mix stuff up but if it was another country's people, not French, I apologize 🤗

The finger pointing one in South Africa is more of a warning than a swear sign, its suppressed anger, its telling you that "if I could have my way with you my dear, all your teeth would be on the floor. But due to circumstances I have to let it slide" kind of a sign. Especially when they point and shake the hand, the hader the shake the deeper the desire to cause you harm. Its quite scary just thinking about it.
In Israel (at least when I was a child), we didn't use the middle-finger gesture that you describe as ubiquitous. Our equivalent gesture was bending the middle finger with the palm facing forward.
I live near Los Angeles and have several friends who have worked at Disneyland. They are instructed that if they have to point (for example to give directions) to use two fingers instead of just one. This is because some cultures find pointing with just one finger offensive. The other, and less plausible, explanation is that it is in homage to Walt Disney who was always holding a cigarette and therefore always pointed with two fingers.

We do take manners seriously in here and it is rude to make that gesture ,especially when the other person you are conversing with is older than you. If you want to emphasize the word 'I/me/myself', you can use the polite one which is, placing your left palm in the middle of your chest.

John, that first full-arm gesture you did that you said was from Friends... it's not, and it actually is rude 😂 It's a rude gesture in many Romance countries, especially Italy; so while it's not American, New York's large Italian-American population brought it here and popularized it enough that people here use it.
John's right though, we only really have the middle finger. But, I'm gonna add a caveat to his point about making symbols with your fingers: be VERY careful not to do that in cities. Obviously, this means cities like Los Angeles, New York City, Miami, etc., but also Cleveland, Detroit, Philadelphia, and so on. If you're going through Montana on your way to Yellowstone, I wouldn't worry about it too much.

I'm thinking of the gesture where you point your flat hand, palm down towards your chin, then flick your hand and arm away from your body. Also there is thumbing your nose at somebody, where you hold your flat hand vertically to your head and touch your thumb to your nose and wiggle your fingers. Which is also a sign of defiance. Also there are symbols like making an L on your forehead meaning Loser, and many universal ones like having your index finger pointed up in front of your lips to have someone be quiet, or the gladiator thumbs down gesture. Pointing at the corner of your eye for someone to pay attention, or half cupping your ear to signal that you can't hear. These are just normal non-verbal communications, but they can be used sarcastically to be rude.
John's kinda got it backwards here. The "up yours" sign is not just from Friends, and is not at all a joke! The other gesture definitely is, but the one where you put your hand in the inner corner of your other arm then swing your arm up is considered offensive. It's used more in certain parts of the US than others, and may have also been used more often in the past, and isn't quite as offensive as the middle finger is in the US, but it's very much so a real thing that you should avoid unless you really mean it. Whereas the gang signs are not really something you would have to worry about unless you were in very specific areas. I wouldn't recommend trying to purposely throw up gang signs, but it's very unlikely to cause a problem, and is not something that you need to worry about accidentally doing.
