as a professional cook now I would think you might choose recopies that fit your tastes... or alter them so that they taste the way you want... recipes are there to steer you in the right direction, but you should always alter them to taste based upon your opinion...

I usually do the recipe mostly as written the first time. If I revisit a recipe, that's when I modify.
