Never saw your fish with a filet knife like that. Always cut one direction. Those filet knives didn't look that great either. I think if you're going to shoe a video of how to filet/prepare a fish don't cut away the full experience just to show the fish already cut. Show every single step in the process. Good video though guy seems very knowledgeable.
