Yeah. When I watched this episode I had to go back and re-watch season1 to know when exactly did he say that 😆 good thing I didn't have to watch the whole season 🤣

I think Enri has leveled up and she doesnt know, like everything her summoned goblins kill give her xp instead, improving her physical stats and unlocking her new skills. So she doesnt notice her strength is high enough to break a knife and thinks its just old and weak, and is unaware her voice can physically move her goblins and instead just thinks they listened to her and obeyed.
She leveled up her command skill, which made her gain exp and level up. By having her summons around all that time and them obeying her, she managed to level up her command and summon skills, making her able to achieve all those and future feats. This isn't a spoiler since it's never explained in the anime.

People don`t dislike this one, since Carne village is kinda important as the first city and the characters are also known from first season. Anyway Ainz gave her two goblin general horn and that`s why she has goblins with her+ since she is the summoner goblins have to obey her evert order and that speech magic was a result of forced order, but you guys know about it already most likely.
I love that when Demiurge gets exited he wags his tail 😭

i dont wanna spoil too much but Enri just has a Commander Class she doesnt know. that allows her to give commands like that one for the goblin. its not the same as the voice magic of demiugre.. it's more like a buff
Her commander class becomes a bit more relevant a bit later
If you wonder where the goblins are from? In ep2 (maybe 3?) Ainz meets enri and gives her a potion and 2 goblin war horns.
Eventually off screen enri blows the horn and a group of like 20 goblins appears. those are the goblins living in the village now.

Also for the actual moment when Ainz said he wanted to conquer the world, I think it was in episode 2 when he was flying above nazerick with Demi and looking at the stars, he absentmindedly said "maybe it would be fun to conquer the world" before thinking "just kidding" to himself but demi took him seriously.
ains is a genius at strategy in battles of the game anything outside that he is absolutely clueless maybe some office politics but thats about s far as his knowledge goes for everything thing else he just goes with the flow of whatevery one else is doing like a good corporate dog
I remember reading demi suppose to be really smart likely even smarter then ainz or close to him he good with planning
