    Thank you so much for making this video & sharing your expertise. I've been holding back on building my knife collection because I can't maintain them properly. Prevention is better than a cure. My knives get a lot of use at my bug out camp. So I have lots of different knives for different tasks from my Morakniv Bushcraft, CRKT SPEW Artisan Cutlery Sea Snake & Kershaw Hotwire. I carve a lot of walking staffs, build shelters and process fire wood. Scandi grind is easy to maintain & sharpen. Micro bevels take more skill. Your explanation of the anatomy of the edge helps a lot.

  • @usernamemykel
    @usernamemykel ปีที่แล้ว

    Great audio (especially considering the hard walls of a typical basement), good videography, good voice/speech delivery, good scripting.
    QUESTION: I recently watched a knife sharpening video by guys who constantly use knives as professional butchers - "The Bearded Butchers", and at no time was finding/dealing with a "burr" ever mentioned. And, one of the butchers flipped his blade edge over every stroke, rather than doing several strokes on one side, then several strokes on the other. These guys' living depends on their knives - so why is a burr important to some but not others?
    BTW - they don't strop.

    • @knifecenter
      @knifecenter  ปีที่แล้ว +1

      The burr is only really important to feel when you are initially setting the edge. Once I can raise a burr on each side then I switch to alternating strokes with each pass. The burr is just telling you that you are sharpening through to the edge at the angle you are using, and you wont have any "dead" spots when you move up the grit progression. -DCA

  • @andyyagoub9429
    @andyyagoub9429 2 ปีที่แล้ว

    Hi David
    How would a burr develop if you are moving the knife from the tip of the edge to the bottom? I understand that a burr builds if you are stroking by the opposite direction; bottom to top.
    Please explain and forgive my ignorance.
    Regards

    • @knifecenter

      Any motion when you are pulling the edge away from the stone will create a burr. -DCA

    So, every pocket knife sharpening video I’ve seen pushed the knife into the stone, whereas all chef knife and woodworking sharpening drags the edge. Why the difference? Seems to me that dragging the edge is better for getting a burr. What am I missing? Type of steel?

    • @knifecenter
      @knifecenter  4 ปีที่แล้ว

      Either way works. Pushing "edge in" is just more common. Some folks will also move the knife in a circular motion. It's all about practice and consistency.

      Get a medium/fine combo flat stone (in base like his or not) and practice on an inexpensive blade you own. Something with AUS8 or whatever the chinese knockoff is of that right now (8CR...?) -- soft enough that you can work it pretty easily, but still a good steel to hold the edge you eventually learn how to put on there.
      Again, the key isn't the stone/device you get, but practice.
