How To Sharpen a Knife with a Whetstone - Kitchen Knife Sharpening

  • Sharpening a knife on a whetstone is both art and science. Whetstone or water stone knife sharpening is an excellent way to put a razor sharp edge on kitchen knives, pocket knives and most tools with an edge. The sharpening process is a labor of love, with practice and muscle memory the results can be amazing.

    First soak your stone in water until no more bubbles come out... this usually takes 10-15 minutes.
    Then secure your stone in a frame or base or on a towel.
    Keep water close by and frequently wet the stone.
    Sharpen one side on a coarse or medium grit with 10-15 strokes and then switch sides and sharpen the opposing side. Check for a burr.
    A burr feels like a fine wire at the tip of the edge and will be on the opposite side from the side most recently sharpened.
    Once a burr is raised along the full length of the blade switch to a fine stone.
    Make 5-10 strokes per side with a lighter touch. After 10-20 strokes alternate strokes one stroke per side. for another 5-10 strokes.

    Flashback. 1978. Me (8 years old)and my grandpa in his garage, stone in the vise on his workbench, teaching me how to stone sharpen on his barlows and old timers. Every year for my birthday he would let me pick one of his knives out of his knife drawer where there were always 10 or 15 knives of various sizes. It was love at first knife for me.

      I have a special love for my papa and all his incredible skills and tools. The man was an absolute inspiration and superhero to me. His work ethic and character was something to look up to. He too had so many knives and his whetstone sharpening skills was an art. I remember he used to cut sashimi grade tuna so thin. Sharp sharp sharp sashimi knife. It blew me away and I was only 7 yrs old watching him do it. He used to shave the hairs off his arms like a razor. Miss that man everyday maaaan🙏🏼🙏🏼🙏🏼😔

    I'm using my whet stone for the first time. I love it so far I'm a big out doors person I live in alaska and I find my self wanting to learn more and more about the tools I use and how to keep them well maintained. Using my own 2 hands and not Relying on other people to get the job done. I have both the whetstone and belt sharpener. I got to say this is not only vary helpful to have and learn with. It gives you lots of options to find your own way of doing things. I hope to give more details when I have tested everything out. Ps please put more information on how to properly clean and get your whetstone ready to put away. Thank you guys for some great videos and tips. Also thank you guys for really coming up with products for people that's want too learn life skills. Your fan so far John Wayne.

    I always enjoy watching and learning with the Knife Sharp method. I have tried several methods of sharpening a knife and find your comment that each method has its pro’s and con’s. I prefer the Work Sharp belt sharpener due to it being fast and accurate. When a knife needs to be resharpened I don’t want to make it an all day affair. If when slicing a Tomato I find the knife needs sharpening, the belt sharpener is pulled out and it is done. Don’t want to think that when I get some time will have to resharpen this knife.

    I bought one of these and the other day. Awesome system! Super easy to sharpen all my kitchen knives and utility knives. It is science and a technique but you can master it quickly. I was able to revive all my knives and place them back to a razors edge. Key is water. Saturate the stone and keep a little bit of water as you sharpen and hone. Awesome system. Highly recommend.     Great video. I had been taught to try and take a very small slice of the stone off with each stroke like slicing a grape, & also when working the other knife side to pull it back toward me. I think I like your method better!

    I have exactly the same stone as you from Amazon I had a blunt knife now it’s super Sharp by following your instructions I’ve been watching videos now for about six months I would say out of my 10 knives they’re all very very sharp . Next week next year investing in a new Japanese knife 🔪

      Just have the right grit stone for the job. Start at 400 grit if your knife really becomes dull

    Thank you I'm sixty two years old and my dad from world war two Taught me how to sharpen on a Stone. However I find this very informative. I have a Ken Onion sharpener I have struggled with for years. I bought Arkansas stones and can't quite get the edge I want 😩. I'm disabled I've shoulder issues that cost me my job. I'm waiting for a complete spine reconstruction. So go through a lot to get the sharpener right height and distance to work on. But as you said reword for working with stones. In the past I've ordered all sorts of belts for sharpening kitchen and hunting knives. Haven't hit the right ones yet. Any way I appreciated your video. Keep it sharp 😊

    Bought one of these units for the 15°/17° angle guides i have the diamond plate benchstone already and the ken onion electric sharpener with the blade grinder attachment. Just need to get my hands on the precision adjust now

    Nice setup, I hope to see a upgrade pack for it too. A strop and coarse and extra fine stone's. With more angles and strop guide.
    I like the guided sharpener. Think I would like this too with the larger stone's. No pivot but that's ok.

    Just bought a whetsone and did only 4 passes per edge. No wonder the paper folded when I tried to cut it. More work than I expected. Excellent video. Thanks for making me work harder.😖

    I am constantly honing straight razors so the thing I do after saturating the stone, unless it's a splash and go stone is to lap it. I am now just trying to re-build my muscle memory so I can free hand the many different knives I own. I dig your stone holder..is it available without the stone? Nice work on that edge and for putting out a competent and easy to follow demonstration.

    Looks great, I'll have to pick one up to try. Any reason that this whetstone should not be used for tools like chisels and plane blades? Aside from needing different angles.

    Too many amateurs don't have the symmetrical skills that this guy does. The best technique is for the sharpener to be ambidextrous! Or, at least, he should develop skills on his support side, (fingers, hand, wrist, hand, etc.) as he has on the other side. Some will call the support side the weaker side, but let's think of everything in a most positive way. We should develop skills that can be used by either side of the body; don't limit yourself!
    I enjoyed this guy's technique and teaching.

    Freehand shaping is a skill I have never masted & I have runed many knives practicing it. For me a pull sharpner is the way to do.

    Love the video series. Should be noted to the viewers what happens to the knife-edge if you are normally using a belt system and you want to change to a whetstone. Does it not take longer and would it not damage the blade in the long run? is it not better to stay with one system?

      This question may deserve a whole video on its own. Switching from convex (belt sharpeners) to stone sharpeners will require more material to be removed if maintaining the same angle. A convex edge is similar to a micro bevel, so if sharpening to 20 degrees on a belt sharpener the effective edge angle may be closer to 22. So when sharpening on a stone adjust to about 22 degrees per side and touch up the edge rather than remove material and reprofile to a flat 20 degree edge.

    This is well portrayed: sharpening with a whetstone is art & science, and embodies a skill set that is NOT trivial and which must be maintained by using those skills on a somewhat regular basis. For a household cook and utility knife user like me, whetstone sharpening proved to be a fiasco. After attempting with several different whetstones over the years, I finally secured a tool (a Lansky, as it happens, there are others) that automatically maintains the correct angle on the edge. And I have had sharp knives ever since.

    How about a video on stropping with diamond stropping compound? For example how do you apply it to a strop or the cloth stropping belts to avoid waste as it is fairly pricey.
