    Hi! Thanks you a lot. Watched this exactly video long ago and endly learned to make smooth and nice latte milk foam! Your tips "know your machine", about angles and milk rotation were the things I needed. Now it is time for me to learn some latte art drownings :)

    I have delonghi with cappuccino and hot milk option on wand .. it perfectly makes cappuccino foam but not for latte art . If i dip the wand in deep to so it just heats the milk and not put more air in . But it doesnt help by the time it heats up it becomes more foamy and not like paint ... If i do less then only paint like froth is on top . What can i do to fix .

    Help please!! I can't make my espresso look so creamy and brown, what can I do? Is it that the beans are not thin enough?

    • @WayneShih
      @WayneShih  6 ปีที่แล้ว

      What espresso machine and grinder?

    • @MiguelRuiz-jm2te
      @MiguelRuiz-jm2te 6 ปีที่แล้ว

      Wayne Shih thank you for your answer,
      It's an oster barista espresso machine (it's around $100) manual and it has metallic filters and all that...
      I bought a coffee bag from Starbucks and they grinded it for me, espresso "term",
      Coffe comes out but it's so quick, 2 oz like in 5s, could it be that the coffe needs to be more thin?

    • @WayneShih
      @WayneShih  6 ปีที่แล้ว +1

      Oster is a very simple home-machine, it can not offer enough pressure, so the crema won't bo so creamy.
      And, when coffee shop(not only Starbucks) grinding the beans for home-machine, to avoid goes to thin and some machine can't brew it, they won't grind it too thin.
      And the most important thing is, a good espresso should brew immediately after grinding, or the quality of the taste and crema will go worse and worse every minute.

    How long do you spend injecting air before before lowering the wand for a latte vs a cappuccino?

    • @WayneShih
      @WayneShih  6 ปีที่แล้ว

      When I just learning, I spend about 2~3 sec to injecting, after years of practice, now I don't exactly do it first, I will injecting and fixing the foam at the same time.

    • @WayneShih
      @WayneShih  6 ปีที่แล้ว

      If you froth with small machine like Rancilio Silvia or Gaggia Baby, it take most of time to injecting, and when you injecting, the milk foam will rolling easily then the milk and foam will mixing well

    To make a 12 oz drink , how much espresso is needed and how much milk to froth ?

    • @WayneShih
      @WayneShih  3 ปีที่แล้ว +2

      I always take 1/2 of the jug cold milk to froth(with any volume of the jug), that will be easier to make good milk foam. so I'll take 20 oz jug (with about 10oz cold milk) and double espresso( 2oz) for a 12oz drink .

      @shahfaisalkhanafridi1929 6 ปีที่แล้ว

      Wayne Shih hi dear. the temperature is 60 to 70c. first i warm the milk then i whisk it.

    • @WayneShih
      @WayneShih  6 ปีที่แล้ว +4

      How about remove 20% foam on the top layer.
      After remove, mix the upper and lower layer with a spoon.
      If I froth with a small electronic whisker( not the one for whipping cream)
      I'll tilt the electronic whisker to help the mixing of foam and milk.
      Maybe I can try to make a video about that. :P
      (Sorry for the poor English)

      Hey, friend, bad news, I tried 4 times just now, I still cannot make a standard latte art, just a single heart.
      I think froth the milk with steam is more easy, but I'll ask friends they are really masters of latte art.
      I'll tell you when I find the way.
      Sorry I can not help now.
