Ribs are a little overdone, but a good test cook for the weber smoke fire
Did you cut the membrane? That's very light on the rub for that roast.

Are you getting more smoke flavor on the Weber compared to your other pellet grill?

I see lots of white particles on your WSF cooking grate. Are those ash?
Yes they are
You need to cook something fatty like a brisket to really test for a grease fire.
Does Ribs had lots of fat. I will, this weekend I will cook a brisket or some pork butts.

Like your video...but you have created cross contamination by having your pork ribs dripping on your beef,..
