IMO, the juiciest/yummiest/most delicious cheese koththu is one that has been cooked in milk, sort of like Bechamel sauce used with pasta. Some people don't like a very wet koththu, but it's my absolute favourite. Don't know if this one was made like that.
Here in America our jamaican/west indian stores sell ginger beer too and it's pretty good. They carry a brand called solo which makes a bunch of different sodas. Only problem is it's like 100g of sugar per bottle

Matchan, what you had was not the real cheese Kottu !!!, Cheese Kottu should be covered in cheese and cooked with fresh milk. Better try somewhere else like (The Kottu Factory, Cafe 4 U, Thenuka food corner or The Dutchman's Street) at Matara to taste the really flavors of a cheese Kottu. Meanwhile, since you're at down south of Sri Lanka, do visit Wijaya Beach at Unawatuna (Near to Galle). You can have delicious food with the coolest beach view ever :) "One of the best chillaxing places I've visited in down south, Sri Lanka" Cheers mate ! Travel safe
