    We have lost many of our cultural and traditional foods. From the preparation, you will observe that it is one of our best traditional foods and hardly you will find one or two people making it. Let us give our full support to the master chef as he is preserved this fantastic idlis. He should teach his generation or from the traditional Vaishnava person and continue the legacy. Such utensils are very hard to find.all the best to the master as he is the real guru and master.

    Those who commented his mixing with bare hands actually did so due to ignorance. There is scientific reason behind it. Handling with bare hands (of course, clean but not aseptic) aids in inoculating batter with beneficial flora which not only ferments batter (so much better than 'oriental' vinegar) but also acts as probiotic flora (which otherwise you pay a lot for in Costco/Sam's). Don't forget steam cooking (steam-sterilization for the picky) that follows. If you observe the way he is beating the batter while mixing with bare hands, it's done to add air into the batter (fluffing) for raising it better as it gets steam-cooked into soft and healthy 'idli'. I'm so amazed with my forefathers who designed this recipe keeping in mind so much of Biology and Chemistry that does into holistic well-being

      You are absolutely right. My mum used to do it as well. As young children we used to ask her why she did she put her hand after the batter is ready, she used to answer, "because you kids love fluffy soft idlis". Amazing.

    The Kanchipuram Idli or the Kovil Idli is the traditional prasadam offered in the Varadharaja Perumal Temple at Kancheepuram. The idlis are cooked in bamboo casings lined with dried “mandharai” leaves. The mandharai leaves add to the flavour of the idlis. The batter for the idlis is mixed with spices and steamed.

      In some systems washing hands is enough but in some systems bathing is important. So it is their belief. Let them follow their belief. It is not a crime to cook food after taking bath that too under HYGIENIC CONDITION.

    When we say S.Indian food, its by and large predominantly recopies from Tamil Nadu. I love all those exotic varieties of stuff available only in TN. Although idly, dosas, uttappam, pongal, aviyal, etc are made in most part of the world these days, the one made in TN stands next to none. Even the etymology of these recipes are purely Tamil words, that adds additional punch to the food. I live in Hyderabad and I like Tamil food. Kudos.

    For those who feel it’s unhygienic, make a study on how people eat old food in the western countries thinking it’s organic and healthy. (Old means refrigerated food or pre cooked food like pasta cereals etc for convenience)

    I have been searching for the place where I can find this idly in kanchipuram during all my visits but couldn't get it. This time I was able to find.If you come out of Sri Kamakshi Ambal devasthanam from the main entrance to the left you can find Sri Annapurna Bhavan ,a pure veg bramhin hotel where you can find this idly called as podi idly.They serve this idly in slices @ 25/-per slice as a person cannot eat this idly as a whole. Two chutneys will be served along with.

    my grandmother always mixed the batter or smashed potatoes with bare hand but never before taking a bath and i remember that nobody in our home ever got sick due to unhygiene ....the love with which she made the food for us was the reason for it's delicious taste ....i realy miss her....

      Can we pls stop saying “North India” “south India”?! Like they are different countries. It’s either Northern India or Southern India. But even that doesn’t make any sense coz Northern India is a bunch of languages and cultures and food and so is Southern India. We cannot just generalize. I understand if some guy outside India says this. But being Indians, you guys should know better. This is Kerala. Some parts of Karnataka might also have similar dish but this is not Andhra or Tamil or Goan food. So cannot be just Southern India. Kerala Idli or even puttu may be

      Ask battachariyars to make it , 800 rs for good one idly , idly will be go for naivedyam and they gave prasadham to us if only we want and pay money , this is not regular prasadham in temple it's special one ... If u want good idly ask temple battachariyars , one family making for Perumal traditionaly ...

      you can find it near by hotels. Mostly in the morning. Otherwise there are lot of small shops selling it . If you want a single big piece it costs around 400.

      Idli is basically starch, not really a healthy option. brown rice is better

      @@callmearchu fruits like papaya, oat milk, some oats. The idea is not fill up. A 16 hour fast period is also a good beginning

      @@arbjful isn't breakfast a must after the 16 hour intermittent fast from the previous night? Intermittent fast never says no to breakfast and 2 idlis with some papaya (because you are not going to consume the entire batter made in to idlis) along with nuts is infact a best fast breaker! You generalized saying idli is only starch. And we oats is not economical especially and you have to go for rollet oats. The normal oats is nothing but 'thavudu' and 'punnaku'.
