  • Coriander Chicken Curry - Dhania Chicken - Dhania Murgh

    Ingredients Required For Making Dhania Murgh - Serves 5 to 6
    * 680 gm/ 1.5 lb boneless skinless chicken thighs or 1 kg chicken with bones.
    * 20 gm/1 oz fresh ginger
    * 10 gm/ 0.4 oz/ 4 to 5 cloves of garlic
    * 1 large onion/ 186 gm / 7 oz
    * 1 serrano pepper/ green chilli. take out the seeds if you want curry to be less hot
    * 1 bunch/100 gm/ 4 oz fresh coriander leaves with stems
    * 1 teaspoon kashmiri red chilli powder/ 1/2 teaspoon cayenne pepper/ 1 teaspoon paprika if you want no heat
    * 1/8 th teaspoon turmeric powder
    * 2 teaspoons whole coriander seeds
    * little less than a cup of hot water
    * 1/4 th cup/4 tablespoons plain unflavored yogurt. Stir the yogurt very well with a spoon to get a smooth consistency before adding to the chicken.
    * 2 teaspoons butter
    * 1 dry red chilli/chilli flakes
    * 1 & 1/2 teaspoons salt or as per taste
    * 3 tablespoons oil
    *** You can even add a tablespoon of sour cream or 2 tablespoons cooking cream at the end.
    Serve this with roti/rice/paratha/naan.

    You are very correct about toasting the spices. I've learned this from my own experience. The aroma of freshly toasted spices once you mash it in your mortar is absolutely next level.

    Wow....gorgeous! I like seeing the chili tempering in the hot oil. The way the dried pods start soaking and restoring their colour and tenderness. Combined with the aroma of course!

    I am with you Bumbi - I love fresh coriander and could eat it everyday. I take a whole bunch of coriander and mix it with a package of cream cheese in the food processer - process until smooth, add salt and pepper and a small chili for heat if you fancy.. Makes an easy, flavourful spread for crackers, bread, sandwiches. Thank you, great recipe.

    totally agree about incorporating salt in different stages of cooking - cilantro paste almost works like sofrito with maximum flavor coming from stems and not just leaves - dry roasting and grinding fresh masala is the professional touch - your red mirchi tadka was subtle spin to finish off this chicken curry - yet one more winner for you

    I have been meaning to make this recipe for a few months, but didn't until today. I added a small Forelle pear to the marinade for a different sweetness. I also used jaggery instead of a traditional Western sugar. It came out fantastic. Another inspiring recipe Bumbi.

    Hello Bumbi, found your channel at the beginning of the month & I must say I've been loving your content. The recipes look easy to follow & I bet they're delicious too. Being Kenyan, I've had my fair share of food that resembles what you make as there's a big community of Indians here but I've only had it in restaurants.     This recipe is so good!! I am living in america the past one year and i saw that all the ingredients you used were available here… like serano pepper. You gave so many tips like which chicken to use. I had no idea that chicken breast becomes like a shoe lace 😂 but it’s true!! Next time i will use thighs. But regardless the gravy is so tasty!!!     I never thought of blending the coriander leaves, just gonna try this now :)
    A couple of questions not related to this recipe : I've come across a few recipes in my indian cooking books that use almonds for the tikka masala but noticed you didn't use them in your tikka masala video, are the almonds just a possible variation in some parts of India or more like a "european" version that doesn't actually exist much in India ?
    Question number 2 : do you make your own curry paste ? I've been making some from my books for a few years but I'd be curious to see and try your recipe if you have one !

      Tikka Masala evolved in the West. Usually no nuts are used in this recipe but you know recipes change depending on preference, but I prefer not to use nuts.
      Regarding curry paste, you will see in all my recipes I build up a curry all fresh. That is how it is done in all Indian households. People sometimes get confused with restaurant style food and actual Indian home cooking. There is a lot of difference. In India people grind fresh ginger garlic and build up a curry based on fresh ingredients and each curry varies with the usage of different spices. There is no curry base or paste involved. Yes I do grind all my spices at home, like I never buy store bought garam masala powder, neither do I buy coriander/cumin powder.My channel is more about Indian homestyle cooking.

      @@CurriesWithBumbi We just finished up. It was honestly Resteraunt quality taste we absolutly loved it. I also couldnt get over how easy it was to make, im always intimidated by curries because they seem to have alot of hard to find spices especially cause i live in a very rural area that doesnt have alot of spices outside salt and pepper lol.

      Thank You. I would suggest to follow the recipe given below. Though that recipe is not on chicken liver but I would follow the same if cooking chicken liver. You may leave out the green peas. The cooking time should be less as well. Chicken livers cook way faster and the more you cook the harder they become.

    Thanks. tried this today but I accidentally used parsley instead of coriander but to my surprise the flavour is still very good.

    I love your recipes, the only one that didn't go well for us is the runny egg yolk one, but the rest - we make them regularly. I wonder if you have some sort of raw vegetable salads/condiments (made with carrots, for example) in your repertoire?

    Do you find using the butter a better flavour than using ghee ?.

      Ghee has a completely different flavor than butter and both the flavors are great. You can even use ghee.

    🤦🏻‍♀️🤷🏻‍♀️ it’s not to much salt. It doesn’t matter if you add it in layers during different stages of the cooking process. One teaspoon is still one teaspoon! Bumbi your food is always perfect so don’t listen to anyone who says such crazy nonsense!

      Thanks dear Christina. I always mention why I am adding that sprinkle of salt at different stages of cooking but probably that’s still not enough for some people because I get frequent comments about salt.

The amounts will be the same just added during different times like you explained to soften the onion etc etc. The amount you suggest is always perfect and never too much! To be honest Bumbi I think some people are just mean and miserable this is why they like to leave negative comments. Just ignore them and continue to make your episodes so you can help people like me who truly appreciate you. Hugs to you my friend.

      This is what I regularly make -
      1. Rice (always a staple at our home)
      2. Dal ( I make varieties of them with different kind of lentils each time)
      3. A vegetable curry which depends on what I have on hand.
      4. Fish / chicken curry
      5. If I make a vegetarian diet then I make something fried as a side or maybe a paneer/tofu curry.

    Ty bumbi another genius curry from the curry queen i put a lot of green chilli and it's nice and hot but if 8 guve to my mother she might explode haha😂
