Anomalie is for that. There is Tim Henson's play through available on that as well, with 8 - string guitar.

I like that you commented on how the two guitars work together. What I finally came up with to explain to myself what I was hearing is that they have arranged their pieces to toggle seamlessly between co-lead (unison) , lead and rhythm. It shows up better if you watch one of Scotties few playthroughs on his channel. It really creates the magic that is Polyphia. I look at a lot of Polyphia content and you are the first person that I'm aware of that has mentioned it.
Tim seems to compose a lot of their stuff in VSTs before transposing the parts into actual instrumentation, so your observation about using MIDI as a backing track is pretty accurate.

I feel like Polyphia create rock music for people who, like rap and pop music. It’s definitely trying to appeal to the widest demographic as possible.
