Do you think using a Jaccard meat tenderizer would make it enhance the bubbles due to more holes allowing for more dessication of the skin, release of steam and fat rendering during the puff phase of cooking? I tried to make it once but I got pork belly with no skin and I didn’t have the right seasonings, the pork was also too fatty. I pretty much failed every step
One of those dishes that never gets old, I always look forward to eating and even when not perfect, still slaps!
