      4 weeks is about the longest I can do without climate control, but I think a week or two more might be better.

      Our family uses a ton of burger and brisket is not our favorite.

    Those "2 steaks"... flat iron and who cuts a Mocktender into steaks? Is it good?
    Also get that grizzle out of the center of the flat iron , they puff up while grilling and man sooo good

      Now I just put them in the grind pile. They are tender but the flavor is not all that impressive and since I can't sell any meat it really doesn't matter that my burger is made of cuts worth $15/pound retail. Growing and butchering for yourself is very liberating. Thanks for commenting.

    That first 2 pieces that you use for burger is $12/lb here

      Since I can't sell my meat it really doesn't matter that I am using expensive cuts for burger. These oppressive food laws should be rethought and discontinued and then I would never use $12/lb meat for grinding. We have lost a lot of freedom in the name of "public safety".

    Ive got to say and I dont want to insult you but your boning out leaves a lot to be desired….. I would get sacked if I boned out that dirty…. Maybe you’re boning out that way just for the video…. Also they were the strangest cuts of meat Ive ever seen….. how could you make money with so much meat going to burgers? Im not trolling you by the way I still enjoyed the video.
