I've been living in Tunisia for the past couple of years. I've been making this exact same pasta for a long time (sometimes using only yellow cherry tomatoes, which have a sweeter and richer flavour than the red ones), though since moving here, I've started adding small amounts of finely chopped confit lemon, a staple in North African cuisine. It heightens the taste of the capers and brings a wonderful acidic zing to the sauce.

Fusili is really the best for tuna pasta as the tuna flakes will find their way into each piece of fusili and the burst of flavour is just heavenly!
This recipe is fantastic Vincenzo, definitely worth trying now that summer is approaching. I'll tell you my version of "Tuna Pasta". I take the tuna fillets from the glass jar, drain all the preserving oil and add extra virgin olive oil and fresh basil leaves. I let it rest for an hour, then I add part of the oil flavored with a clove of garlic to the pan. Once browned, I remove it and let the passata cook over a low heat, just as long as the pasta is cooked; I cook the pasta (I prefer long pasta, a good spaghetti, or spaghettone) 👍 When there is 1 minute left in the sauce, I add the tuna and basil preparation (it doesn't have to cook, it just has to give the right aromas and flavors to the pasta). I finish cooking the spaghetti al dente in the sauce in the pan, and let it cool slightly, adding more fresh basil to taste. An exceptional dish, which tastes of "sea" and "summer". I definitely have to agree about fusilli being perfect for tuna. Whether I'm making a cold tuna pasta, a tuna casserole, or whatever with tuna.....it's always fusilli. I will now try this dish, and add anchovies the 2nd time around as some others have suggested.

Ah! I have been making this recipe for a long while now. I found it a long time ago in an Italian cooking magazine, they called it 'Spaghetti Rapidissimi'. I like your version with the added cherry tomatoes and will try it next time. I have been substituting with salmon or trout, which I cook extra just to use in this recipe.

I am definitely trying this for dinner tonight. This got me hungry after just having breakfast! I have been wanting to start liking canned tuna again since I have been bored by mayonnaise-y "tuna salad". Even with red onion and some horseradish, I just haven't been into it for some years. With this Italian spin on it, I can cut out the mayonnaise calories and swap in some beautiful cherry tomatoes I have in the kitchen today. Bravo, Vincenzo!

Dear Vincenzo I like with this dish to use a can of Rio mare tuna in olive oil as I noticed the olive oil has a hint of lemon and its acidity goes perfect in that dish.
I use Rio mare tuna in olive oil as my sauce to emulsify my spaghetti and add parsley, its so simple but so flavoursome!

Ah fussili. My absolute favourite pasta, because you can get the sauce all in there and you can pick them up with your fork really easily into bite sized portions

just the way i like it. love the combination of tuna and capers.
the only difference i make is, i use larger fresh tomatoes and peal them so i have no tomato skin.
and .. as it is not easy to get good tomatoes here, i admit to use a little bit of sugar to compensate the acidity of the fresh tomatoes.

This is a great recipe. I did add a little something that I thought was needed...a splash of lemon. Just enough to get a hint of lemon flavor to accompany the tuna and capers. Very good. From Delaware.

I love this with some fresh salmon, but thats just because salmon is one of my favorites when it comes to seafood. Also love lobster, crab and shrimp 🤩
I usually put a whole bunch of fresh tomatoes and put them through a foodmill (after they've cooked) so I can get rid of the skins which my system doesn't like😅) and nothing beats fresh tomatoes (in summer) 🥰🥰

What a coincidence! I made this today. Not knowing what I was doing - seat of the pants, and out of order steps-wise from Vincenzo's process. Today I used penne rigate. Here we call the round small tomatoes cherry tomatoes, the ones I use and Vincenzo used, are called cocktail, oblungo. Back in the States, I think we called the oval ones grape tomatoes. I cook this dish for myself often. Next time I think I'll revisit this video to do it correctly.

@@vincenzosplate Initially, I sauteed garlic, I don't think I use onions with this recipe, seasoned with salt, pepper and basil. I think I then put in the small can of tuna (which I know from your videos was wrong). I then added some diced cocktail tomatoes and some tomato puree. I let it cook for a while before I start the water for the pasta - opposite to your method. When the pasta, penne rigate, is ready al dente, I finish cooking it in the skillet with the salsa. That's the best I can remember.
Pasta tuna is one my top 3 pasta dishes , you cant go wrong if done right either tomato based or lemon based . it always the way to go at lunch or dinner. keep it going vincenzo , following you from Sudan.

My humble 2 cents: I don't call it a 10-minute anything unless that time includes organizing the whole stuff. I did what I call "lazy tuna" once. When my pasta was just slightly undercooked, I drained it and mixed with a can of tomatoes chopped in cubes, added a pinch of salt and a can of tuna and all olive oil it came with, mixed again, and covered with grana padano from a bag (flakes, not grated). That's it. Can hardly get more basic than that but I loved it. Will definitely do it again.

Excellent, Chef!!! This looks amazing! I imagine this would work nicely with sardines or chicken if someone didn’t have tuna available. Your thoughts? I think this is a budget friendly meal that per portion would feed several people at a great price and be healthy and filling. And I bet leftovers for lunch the next day would be very tasty and a great way to get several meals out of one cost investment. Plus it’s quick to make!

Yellow tomatoes have the right amount of flavour, not too sweet and not too acidic. Would work perfectly for this dish.

@@vincenzosplateit came out absolutely delicious, I always use de cecco and it was excellent… i promise i will be taking photos next time . I did it for 8 persons and there was no problem at all because i have the right tools 🌶️
With tuna i like your original recipe better. No tomatoes, but lemon juice and zest. Also parsley and capers (no garlic). Probably the ultimate summer pasta for me.
So amazing. Also easy to make vegan tuna pasta as here in the Netherlands we have vegan brands of canned tuna that are almost equally as good! I eat pasta like twice a week and I totally forgot about tuna pasta haha

I will try this for sure. I liked the previous tuna pasta recipe with that I liked the tuna cooked before the tomato, maybe I will try to add it here also between the cherry tomato and before the sauce and give it a bit of frying to bring out more flavours. I'm sure it will be perfect

That's a nice simple recipe. The only things I would add is to start with some anchovy paste and red pepper flakes to make it slightly fra diavolo. I would also use olive oil packed tuna instead of water packed. Thank you for this recipe.

Sometimes i use makrill, tuna and anchovis togheter mixed in from canfish
Using canned fish is convenient and still delivers delicious results. It's great to experiment with different seafood options in your pasta recipes. Buon appetito!

Will try this today, looking forward to that. But had to forget 1 thing today didn't I when at the supermarket, and thats the parsley. So annoying 🙄 😅. But got a little jar of mixed herbs so that will do.
You can always remove parsley if you do not have readily available. I'm sure it would still taste as good as it is.

@@vincenzosplate Made both, and they are both delicious. I found the white wine can soften the tuna "fishy" flavour, if that's not your thing.
Made it today but added a little bit of lemon juice, zest and fresh dill. ❤

So it’s basically puttanesca, no olives and swap out anchovies for tuna, gotcha ;)
