    Do you think this would work with organic pumpkin for pumpkin bread? Hum I tried the banana blueberry and really enjoyed it sometimes I will slice it and fry it like you do a pancake with maple syrup and sausage

      Good idea. It might work. You may not need the banana though because pumpkin puree will be quite moist right? I am glad you like this recipe and love your pancake version :)

    Do you leave the bread in the loaf pan while it cools?
    When do you remove the bread from the pan after baking? Thx!

      Yes you leave the bread for only a few mins - like 5 mins before getting it out of the loaf pan and cooling it on a tray or a plate.

    Can i skip the Maple syrup or it will affect the texture if skipped? Looking forward to try it. thanks!

      You can skip it. I don't think it will affect the texture much. If the batter looks too thick, add a little more of water/coconut milk.

    Great video! Thanks for this. Just to confirm, Is there only two flours that you used? I saw you measured flours and put it down on the sheet 3 times, after the cassava flour, your measured another flour and put it down on the sheet

      the second flour is arrowroot flour. Look in the description for my recipe post where you can see print recipe too.

    If you toss the blueberry’s in some reserved flour they want break or sink to the bottom.
    I’m looking forward to trying this banana bread.

    What happens if you leave apple cider off? I also have gerd and I'm sensitive to it.

      If you are sensitive to apple cider vinegar, you can use lemon juice instead.

    I have tried making this 3 different times using ALL ingredients listed. I am full AIP. Each time my bread is raw even after baking for an additional 45 minutes. I tried another bag of Otto's wondering if that were the problem. Save results. Can you give me an idea as to why? I make your brownies which come out DELICIOUS!

      I am not sure why yours is not baking well? JWhat brand of arrowroot flour do you use? I use Anthony's Goods or Bob's Red Mill. Just yesterday I got a review on my blog for this same recipe and the person said it came out fabulous.So really don't know why yours is not working! Sorry!

    I followed this recipe exactly but my bread came out very chewy. I used bobs red mills arrowroot flour and ottos cassava flour. Not sure why it was chewy any tips

      I baked it for 55 mins. Yes batter looked like yours. I used bobs red mills flour maybe that’s why?

      ​i keep hearing that same report from people using Bobs Red Mill Cassava. Apparently it can be gummier than other brands for some reason 🤔@@sunitasu

    Could you sub coconut flour for cassava flour?

      I have not tried that. So not sure how that will turn out. in general coconut flour absorbs a lot of water so you may need to add more liquid.

      yes you can. Make sure to thaw them beforehand and drain any juices otherwise the consistency of the bread will be different.

      I am not sure what could have gone wrong. Guessing the brand of flour might make a difference.

      Hi! You can use coconut oil too. You will have to make sure it's in liquid state. Also some folks don't like the taste of coconut oil in baked goods so I suggested olive or avocado oil.

    why did you use olive oil? It is not AIP if you cook it

      Olive Oil is ok to cook/bake at moderate temperatures.
