I think NFS 2015 is to this day the most stunning and beautiful representation of night time to date. Sure the game does tons of other things wrong but I think there's no denying that as far as the visuals go, it's gorgeous
Night racing in Shift 2 felt insane because night time didn’t feel like it was just dark blue colors. It was pitch BLACK and it’s scary to combine that with the terrifying sense of speed.
Shift 2 night time racing is definetly NFS games equivalent of that horror games likes of Corpse Party, Silent Hill, & Dead Space, especially on Nurburgring
Nothing beats 2015. Mainly because they didn't focus on daylight and the main aim was to give NFS Carbon vobe to it. That game is defo a must play in chilly nights
Night should be the default time in a race game setting. It just has a superior atmosphere. A few games like Need for Speed Most Wanted 2005 did the daytime racing right. But in most games daytime feels real bleak. You go to nighttime street racing in Forza and it feels like a totally different game.
Burnout Revenge also had amazing daytime maps, especially Motor City and Hong Kong (i forgot the in-game map name), Burnout 3 and Paradise feels stale in my opinion, it's just too colorful and the cars having those legal track style liveries doesn't help lol.
Night time in need for speed rivals was always stressful to me, especially when it's raining, thundering and you have like six cops +helicopter on your tail.
For gran turismo 5 and 6 you literally picked the only tracks with visibility at night and its literally because of the street lamps, if you do any other track at night you cant see jack shit, barely 2m in fron of you

GTA 5 feels bright because it has such an immersive city Los Angeles that's illuminates all day all night in real life that's why I think GTA 5 is realistic in that feild

I think that the developers like EA ( Criterion, Codemasters), Ubisoft, etc. should take a little risk doing at least one racing game with one time setting just like the old NFS, like for daytime could be just as NFS Most Wanted, Pro Street and Undercover were and for night time could be just as NFS Underground 1 and 2, Carbon and even the more recent NFS 2015 were. I think making the game for just one time set can make the game feel very unique and memorable just like those old NFS were.

It's a crime to not race in the city for MW2012. Like, that has to be the best city I've ever seen in a racing game and I really can't see anything that comes close.
AC looks surprisingly good, because of the night you don't see the terrible graphics. Driveclub is the best. Forza 7 also looks surprisingly good. GTS looks amazing. In GT7 it seems it was not quite night, but rather late evening. Fh5 looks like shit for some reason. I mean much worse than fh3 and 4.
