I work a 10hr day, with commute I'm away from the house for 11hrs so I really have no time to cook during the week. I switched to meal prepping for the work week - lunch AND dinner - and batch cooking everything on Sunday (I only have a 4 day work week so I plan Friday, grocery Saturday, Sunday cook & clean dishes). I'm only cooking for myself and It makes a world of a difference during the week days when I don't have to cook or do dishes beyond the containers I'm eating out of.
This is a brilliant approach. I used to batch cook my lunches when I commuted to an office, but I haven’t been able to motivate myself to get into the habit of doing that again. This is my sign to try again! What are some of your favourite meals? I tend to do a lot of salads or rice bowls for lunch, but I’m always looking for more inspiration 😊
