    Something that's working OK for me, as I need less coffee that what double filter offers. I use single filter. My inner burr is at 3, and outer is at 5. I also adjusted temperature to ~190F. Gives good results with single shot without tasting sour or bitter

    Hi Ahmet, first of all I have say you make great videos! Very professional and somehow getting me in great coffe-mood and relax-feeling... thanks for all of them!
    I'm owning Barista Express since few days and still in "dialing-in" process... "damaged" already a lot of good coffe beans. 😊... I'm already able to manage quite well double-shot based on overall setting, dosing and experience which I collected cross the internet (your videos included of course).
    Neverthless what I'm really still striving for is the usage of single-shot (baskets) too... I got with maschine single pressurized (double-wall) and single non-pressurized (single-wall) baskets... with double-wall we can discuss it is "somehow" acceptable espresso, but still with objections I have to admit... with single wall it's almost impossible... is that also message of this video? Or what is please your daily experience with filter baskets? Any ideas how to improve?
    Background: I love coffe, frequently within the day,... and simply double-shots are really strong to manage standard count of cups (4-6) I normally drink... so I'm searching the way how to enjoy good coffe but cofein-safe. 😅
    Any recomendation please regarding this topic?

      Hello my friend 🙌 I'm sorry that I can answer your question after 5 months. I am happy that you liked my videos and that they were useful to you.
      In this video, how to dial a good espresso with both baskets (single wall). I would like to add an important information: Use your single-walled baskets with fresh coffee beans. For the best taste and crema, consume between 1-3 weeks after roasting. You can prepare roasted coffee beans in dual-walled baskets after the 3rd month. (in my opinion, never use a dual-walled basket) Dual-walled baskets are designed to froth the espresso, and a sprayed espresso will not be very tasty.
      Due to the 54mm single basket structure, I could not achieve consistent results. When you tamp the single basket, the edges will be compressed more and the middle will be less. I think that due to the V-section of the basket, the water cannot be distributed equally everywhere. Unfortunately, I have always gotten the best brewing results with a double basket (single wall). Maybe you'd be better off drinking double shots of espresso less often.

    Hello, Nice video. May I ask where did you get the bottomless portafilter from? I have been looking to get one for my Breville Infuser (same size 54mm) but almost all of the ones on Amazon have some negative comments concerning lack of tight fit. I wonder how do you find your portafilter.

    Hello! I must admit that it is very so to say aesthetic video, which I totally love.
    Since I am getting into the coffee world, in my opinion, 46 seconds of the total time is totally too long and it should take maximum of 25 seconds. With a longer time of "brewing" , you are extracting the taste that should not come from the coffee and it tastes not good anymore :) Just encouraging you to check it out.

      Thank you for liking my video. Have you watched the whole thing? In the rest of the video, I test a 33-second shot in the single basket and a 28-second shot in the double basket. Extractions under 25 seconds are generally sour in machines with 54mm portafilters such as Sage Barista Express, which means underextraction. Of course, this may suit your taste.

      I see no one responded in 2 months on your question. I hope this isnt to late.
      But when you talk about a Ratio, like 18 grams in 36-40 grams out. you talk about a 1:2 to 1:2,1 ratio.
      The sweetspot of making good espresso is somewhere around that 25-30 seconds.

      Hi, thank you. I start each shot with a manual pre-infusion. For a double shot, I aim for a 30-second extraction, including pre-infusion. For a single shot, you can finish in a few seconds less. The important thing is that you should get a 1:2 output. You can watch manual pre-infusion in this video.

    Seems grind way too fine since coffee takes too long to poor and not supposed to drip suppose to have nice even flow. Just my opinion

    What is the basis of how many grams is single and double shot of espresso? I was always told single is approx 7 grams in Italian café

      I know the industrial standards are 7g dose for single basket, 14g for double basket. However, for me, the right ratio in double basket is 18g dose 36g yield. For a single basket, 11g dose yields 22g. The ratio is always 1:2

    James Hoffman said this machine does not make good espresso. I think it was this exact model. Something about pressure and then pressure spiking and then some other factor and some other stuff i forgot. lol

      You can pre-infuse manually at the start, but you cannot control the pressure towards the end. This is a huge drawback, I partially agree.

      I don't think so. If you're not getting sour flavors, you're getting a good shot of espresso. I prefer bittersweet notes, preferably over 30 seconds.

      Merhaba, ben hazır içme suyu kullanıyorum, bir çok farklı marka denedim özellikle çok beğendiğim bir su olmadı ama Fuska suyu değiştirme ihtiyacı hissetmedim uzun süredir kullanıyorum.
      Şebeke suyu hiç düşünmedim çünkü kireçle mücadele etmek istemem. Ayrıca mineral bakımından da zayıf olduğunu düşünüyorum.

      When the coffee starts to get wet, the brewing process begins. In this case, it may be more accurate to start the timer as soon as you press the button. There is also one more reason for this. It is also important to see the pre-infusion time and when it starts to flow. A total of 30 to 35 seconds of extraction, with the first 8 to 10 seconds of manual pre-infusion being ideal.

      Of course, you can use an non-pressurized basket. Check that your portafilter is suitable for its diameter. If you do not have a bottomless portafilter, do not forget to measure the height of the original portafilter.

    Hello Ahmet, i also have the exact same machine and coffee scale, but my scale always increases and decreases randomly, but also increases in weight to very high numbers when the machine begins brewing (before coffee hits the cup).     Fist time I using my new Barista Express and the grinder just isn't able to smash the beans and goes making the sound of being "loosen" inside as the external pieces don't move...

    So I unboxed my new espresso machine and jumped on your video, have to say you are so cool! I was worried about my double shot being less in quantity but now I see it's about the right quantity and I learned so much more today! Thanks brother! Also currently I am buying fine grind coffee powder, but soon will get the grinder and grind my own beans, do you think the fine grind is good for a double shot, as I see you kept the grinder on Level-3 for double shot which makes me to think if fine grind is Level-2 or Level-3?

      I suggest you two of my videos, my friend. If you own a Sage Barista Express, you should definitely watch them. You should adjust the inner burr grinder and clean it frequently. The flavor of the espresso should get you to the right grind setting. If you are drinking a sour espresso you should grind finer, if you are drinking bitter coffee you can grind it coarser. While providing all this, you must have a stable reference. I suggest focusing on the 30 second extraction reference for 18g dose 36g yield. Then trust your palate, it will help you find the best espresso over time!
      Good equipment is important or you will have to work with inconsistent results and it is very frustrating.

    What's difference between single and double shot
    Some use 18 to 20g of beans and call it single shot espresso, you used 11g for single and 18g for double shot!
    Is it the portafilter size, If 51mm then 18g would be called double shot and if it's 58mm then 18g would be single shot?
    It's somewhat confusing

      You are right, there can be conceptual confusion about this issue sometimes. Sage Barista Express works with a 54mm portafilter. 11g dose for single basket prepared for this machine, 18g dose for double basket is ideal. To give another example, the Delonghi dedica EC685 espresso machine works with a 51mm portafilter. 6g of coffee is required for a single basket, and 13g of coffee is required for a double basket.
      Industrial standard 58mm portafilter is used. In short, the dose is adjusted according to the basket and the espresso machine, and the double basket 18 - 22g dose is accepted.

      I often use this dose. For lighter roasted coffee beans, you can increase the dose by 1 - 2g. The puck surface should not touch the shower head. To test this, insert and remove the portafilter. If the puck surface is deformed, use a smaller dose.

      Sage Barista Express single basket does not work well. It is not possible to tamper with the middle part of the basket correctly. Flat tampering with a funnel-shaped basket will never work well.
      So what's my best setting?
      18gr dose to double basket,
      Inner burr grinding setting 4,
      grind level 3,
      Tamper with 15 - 20kg pressure.
      Brewing;
      Hold down the double shot button for 15 seconds,
      The pre-infusion slightly raises the pressure inside the basket.
      In 8 - 10 seconds, the first drop flows into the glass.
      In the 15th second, the drops converge, at that moment, release the double shot button.
      The pressure in the basket shows 12 bar and the needle stays all the way to the end of the gray area.
      You have to press the double shot basket once to stop it.
      for this, wait to reach 36 g yield.
      Aim to finish in 25 - 35 seconds.
      adjust your grind setting to ensure this.
      For example, if you have a yield of 25 g in 35 seconds, you should make the grind coarser.

      @@millotantoine6357 haha, dude I've talked about this before in the comments to a lot of people, but I can tell it anyway. I'm telling you briefly what you need to do;
      - go to fine grind
      - use wdt
      - make good tamp
      - make sure to use fresh coffee beans
      It is very normal to have this problem. You can see the pressure 12 bar, you don't have to worry.
      Make sure to use a pre-infusion for the first 8 seconds. You can learn this from my videos. good luck. 🙌🏻👇🏻

      What’s happened is called channeling. The water finds channels within the puck that have the least resistance.
      This can be caused by:
      - not evenly distributed coffee in the filter. Make sure you use the WDT (needles) to distribute the coffee evenly in the filter.
      - coffee is too lose in the filter. Tamp the puck with approximately 15 Kg. Use a scale to check if you’re unsure. You can’t easily tamp too hard but there’s no need/benefit to overdo it.
      - brewing with too much pressure. It’s custom to brew with no more than 9 bars of pressure. Ahmet uses 12 bars on this machine with good results. I use 9 bars but with a wider 58mm filter, so that might explain the difference. If everything else fails, I would recommend trying to brew with less pressure.
      I agree with everything Ahmet mentioned, I just wanted to add the ‘why’ to the ‘how’

      If you have a new machine and haven't programmed the 1 cup, 2 cup keys yet, my answer is Yes. But Sage Barista Express can do much more than that. I think there's a lot of things you need to discover on this machine. I recommend you to watch the videos on my channel.
