I noticed you plugged your earphones to the monitor port but what if you have two people on the podcast do you plug in a speaker to the monitor port?

Yes. Monitor port is for monitor speaker or headphones.

Turn on the monitor knob. You can hear the sound from MIC 1 and MIC 2
