For tacos, I always recommend Taco Movil which is right across the street from the McDonalds. Margaritas, I would say hit up Hussongs (which is to the right of Papa's & Beer)

If you go to any beaches, make sure they are not close to the port. The one I was told is nice is La Joya (La Jolla)

Since you like sea life you should visit Aquarium of the Pacific, it's in Long Beach so should be convenient for you.
Unfortunately, I live in AZ and whenever I am in Long Beach, it is usually to board a ship (or a late night hotel stay before a cruise)
