This is so different to the UK. We use those velcro activities as filling in activities. For student work, we do sentence building activities, ie a present a picture and students select subject verb and noun. Then they copy it. Some write straight away. Or we do things like write to characters etc. Similar for maths, they do calculation activities - ie reading the time, addition and subtraction, division etc. Most activities are as practical as possible.

What size three ring binder do you use?
I always start in a 1" and then as students get more pages added to their binders, if needed, I'll upgrade to a 1.5" or 2" binder.
