Don't give up on experimenting with the wild variaties. I have pulled some delicious fruit with no bitter aftertaste from the wild here in Kentucky. Good video.

i'm looking into growing some paw paws on our Rocky Mtn homestead...do paw paws need to be picked totally ripe off the tree or will they ripen on the counter...

Yes, they need to be picked when ripe. They won't ripen off on the counter.
