There’s definitely pickled onions in Vietnam! My parents love eating Pho with pickled onions! In Vietnamese, it’s literally translated “Vinegar onions” :) they always make sure to order that when they eat pho. I’m surprised you asked that since I thought the pickled onions you’re eating came with the pho 🤣

Next time you should try pho with chili oil I love it so much in my pho! Beans sprouts are a must too, I can't have pho without bean sprouts!
