    This is why in Japan it takes years to become a sushi chef. I only will eat from a reputable place. Sushi fish is flash frozen, or certain fishes cured in salt or marinated in a vinegar... there are many things sushi chefs do for safety. Sushi wouldn't be as popular and a long lasting tradition if people were dropping like flies left and right getting sick. Obviously there is risk in anything but I will still be eating sushi! I've gotten food poisoning from a continental breakfast at a hotel and from diner food but have yet to get sick from sushi. Food temperature and preparation standards are always important to adhere too.

      Ive been eating sushi regularly for the past 20 years. Only on one occasion did I get diarrhoea and I put tht down to me eatinh sushi at a place tht I really should not be eating raw food.
      From what I know, sushi grade raw fish is different from the raw kinds that are sold and with the expectation tht it should be cooked prior to eating. At least in my part of the world , this distinction is clearly made at the stores.

    literally nothing can keep me away from sushi. and i hate to be that person but ive been eating it for over a decade now and nothing bad has ever happened lmao. just dont get sushi from the gas station

      yeah i just love sushi too much but ppl who get questionable sushi from questionable places and complain about sushi making them sick i don’t get. i always get my sushi from really reputable restaurants and when i make sushi i always get it from asian high quality stores that label them sashimi and every time ive eaten them i felt fine

    Good thing sushi in the EU has to pass a series of strict quality controls before being approved for consumption in both markets and restaurants. News like this would unleash a scandal of unprecedented proportions, to say the least.

      In Canada as well. Never had an issue. I'm also in the food industry and have seen all the rigorous food prep that establishments have to go thru in order to serve sushi. ❤🍣🍤

      Word of advice is if you’re going to be that afraid, then don’t eat it. I remember seeing them pour vinegar into the batch of strawberries and knew those strawberries would taste like shit. People still freak out about msg killing them when it really doesn’t.

      @@LG-bb5zq most of the time it is frozen which kills the parasites. And the worms ain't that bad, they typically dont have lasting effects on your body. They typically are killed off in healthy humans within weeks.

    I think "Doctor" Youn needs to atleast read up on food code before giving the advice of dietitian. Food code 3-402.11 "requires that fish that is served raw or undercooked be frozen for the destruction of parasites." This practice is also within Japan's health codes as well.

    It should be noted that sushi is not always raw fish/seafood. Sushi is sushi because of the vinegared/seasoned rice. Thus two of my favorite kind of sushi are egg omelette and cucumber :D there’s also chirashi zushi which has lots of variety in toppings including vegetables! So if you reallllly don’t like raw stuff, you can still eat sushi :)!!

      Good point.
      The word sushi simply means 'sour rice' (because it's seasoned with vinegar).
      Sashimi is Japanese for raw fish.
      I like unagi myself.
      It's made with grilled eel.

      @@marylee2732 I think you might be confusing “sashimi” with “sushi”. Sushi is definitely all about the vinegared rice which is why there are so many kinds of sushi able to be made. Sashimi on the other hand is a dish of raw fish/seafood with dipping sauce and contains no rice. Hope this helps :)

    If you’re going to eat sushi I’d suggest going to a reputable / higher end restaurant. It’s expensive but the fish quality is so much better and these restaurants usually have extensively trained sushi chefs.

      As someone that used to work in a high end dining, i would still be quite wary of it. Some of the places that I've worked at have an amazing reputation and view from an outsider perspective but stuff still do happen in the kitchen so always be careful.
      If you still want to do sushi then i suggest learn how to do it yourself and eat at home! a lots safer than any place that you could go to.

      I recently read in the Chicago Tribune that high end sushi restaurants in New York all tested positive for contaminated sushi while charging exorbitant prices. Sucks because I could eat sushi every day 🥴

      Exactly, knock on wood!!! Our favorite sushi haunt has never sent me worshiping at the sacred circular porcelain, but a popular seafood restaurant in Cardiff did with their raw oysters 🦪!!! They were so expensive! Caught me wayyy off guard. Got home, though I was gonna die!🤭🤮

      @@silklavender well… maybe, but it’s better than accidentally eating one of those. Also, Philadelphia or sometimes called a bagel roll is delicious and it has smoked salmon. Other than that shrimp tempura (which is cooked and traditional) as well as spicy crab rolls (also cooked and traditional) are very delicious

    Tbh you can get sick from *any* food when it's not being handled properly. Sashimi (proper term for raw fish, sushi itself is not) is not inherently dangerous to be consumed, it all depends on where'd you get it from

    So my father is a sushi chef and I just wanna confirm out there that it’s not very common to come across these. Sushi chef’s are trained to spot these and eliminate them in an instant. With that being said, don’t settle for cheap sushi spots and you’ll be golden.

      Also to note, farmed salmon at least has a lower rate of the worms than wild ofc farmed salmon has other parasites like "lakselus" idk what you call it in English my bad, but those are usually removed by the fish farmers or factory workers before being shipped to the consumer

    Sushi only refers to the rice mixture used. Sushi can be made with anything. Not just fish, and not just raw fish. Raw fish (or other meat sliced and served in this fashion) is called sashimi. Sushi can be 100% vegan. It doesn't have to contain fish or animal products at all.
    If you're worried about fish, just eat egg or vegetable sushi.
    Edit: I really don't like this fearmongering.
    I strongly suggest to only eat seafood (and honestly anything) from reputable places.

    It is mandatory to have fish served for sushi to be frozen at least 7 days. As a sushi chef, this is basic knowledge. We can not served fresh caught fish to customer. In my 30 years as sushi chef I never found any worm in any fish I served. So I don't know what he talking about. If you dont like sushi, it is fine by me, but don't scare people like that.

      The US has very strong food safety regulations and requires specific actions and documentation for sushi grade fish. This fish is not sushi grade and must be cooked before eaten.

    That parasite is the anisakis worm and although it could be in sushi, it can be killed using salt. This is a effective way to kill the parasite, but if it doesn’t work well, you can also put it in extreme temperatures to rid of it. Usually this sort of parasitic issue would only happen if the fish was shipped overseas and packaged, or if you bought cheap sushi. If you go to Japan and eat at a sushi restaurant, the chefs will already have cleaned the sushi and even if you get food poisoning (which can happen but is generally uncommon) you can use ginger or wasabi.

    They also deep freeze the fish-required by law-at a temp low enough to kill off these parasites. Some fish have parasites that don't die due to deep freeze, which is why you never see raw sushi of fish like cod.

      Yes, at least in Europe and the US almost all fish must be frozen before prepairing raw fish dishes in the restaurant, also supermarket fish that is sold as "sushi grade" has been frozen before selling.

      Even in Japan, a lot of stuff gets frozen. Especially in cheap sushi restaurants, most fish is frozen. Only if "nama" (生; raw) is added, it's actually fresh fish. For good sushi restaurants, especially at the sea, the fish is probably raw though.

    Because a sushi chef in Japan is looked upon with respect, because he has worked many years perfecting his skills, and today anyone can open a sushi restaurant and taint the name and ultralight traditions of Japan. Most sushi chefs that you get your sushi from are not Japanese and have not even gotten a proper education. Today the sushi industry is dominated by Chinese and Vietnamese because of money. They don’t have respect for the tradition and is usually not good. Freezing the fish first is a HUGE requirement in Japan, this kills of the parasites. Did you know that traditionally Japan did not eat Salmon raw in sushi? Because it was known to be full of parasites, but Norway changed their minds with Norwegian salmon.

      Me too! I like this sushi idk what it is but it tastes like chicken and has sesame seeds on the outside.

    He's talking about anisakis parasites. They won't kill you, but they aren't very pleasant. They're often found in mackerel and yellowtail, but are easily killed with a quick deep freeze and/or vinegar wash.

      Vinegar wash won’t kill anisakis. To kill the parasites, fish must be frozen at -4°F (-20°C) or below for 7 days at a minimum, or they must be cooked through. Most sushi grade fish are frozen before and safe. The problem is that there’re so many questionable sushi chefs/joints in the US who don’t seem to follow the food safety guidelines. I’ve been served bad fish countless times here.

    Also a doctor. If this is in the US, fish served as sashimi, sushi, ceviche, tartar. .raw, is required by FDA regulation to have been frozen to kill parasites. If you get anisakiasis from fish sold as sushi, report it to your local health department to be sure the fish was truly sashimi grade.

    Food scientist to the rescue- eat from a reputable sushi chef or supermarket . In SA most fish are frozen before handeling so that eliminates the parasites. In EU, FDA special laws are in place, however there is still cool chain violations from the restaurant side of things. Be cautious and buy more frozen fish! ( I still eat sushi, some of my Professors’ don’t🤷🏻‍♀️)

    As a sushi chef this is completely wrong. Any fish we get from overseas are thoroughly inspected at highly rated facilities and previously frozen at least once before being shipped to us. We also cut and inspect our fishes before we even prepare it to serve. If we were to ever find a parasite, we toss the entire fish and decontaminate our kitchen. Out of my entire decade of being a sushi chef, this has only happened once. We don't ever just take it out and serve it to you.
    I've also never gotten sick from eating sushi but the 2 times I've gotten food poisoning were from COOKED chicken at restaurants.

    However in American well-trusted restaurants the fish is frozen beforehand which kills the worm and won't cause any side effects. The most cases of Anisakis worm being found in fish are in Japan. Not America.
    Edit: so no one else misunderstands, I'm not saying all Japanese sushi has Anisakis worm in it. Of course there are chefs who can properly handle the raw fish and take the right precautions. I'm just saying that swearing off sushi completely is probably unnecessary if you buy your fish from a well trusted market or restaurant and/or check it/handle it yourself.

      Nope, western Europe and Japan are where the worm is most likely to be found in sushi. In the Americas it occurs most frequently in South American countries.
      Sushi, and fish in general, aren't as popular in the US as they are in the rest of the world. Here in the states we primarily eat chicken, beef, or pork. So there just isn't as much opportunity for someone to get sick from these worms. Whereas in Japan, where sushi is incredibly popular, there's a higher rate of occurence due to greater exposure.

    I've been eating sushi almost once a week for the last 19 years of my life and I've never gotten sick, not even close. Sushi fish like Salmon or Tuna are always flash-frozen to kill all bacteria and worms, and even if you eat one with worms by accident most of these are not parasitic in nature, so it's just like eating a single dirt worm. Japanese ppl are among the healthiest ppl in the world; they live the longest and their skin is flawless, and they eat raw fish constantly, which is rich in omega 3 and lots of amazing properties

      Just because other people don't get sick from eating sushi does not delete the risk food in Japan is under immense quality control and it takes year's to become a sushi chef. That kind of control will not be guaranteed at you local sushi restaurant and definitely not from fish you get at a grocery store. People should be aware.

      *not always flash frozen depends on where you're getting your sushi from. Often high grade sushi is from parasite free fed farm salmon or trout - yeah most people don't know the difference. Freezing it lessens the flavor. But no parasites fed or in the farm = parasite free as long as it's fresh. Never garanteed though as with anything. Depending on your state or countries regulations, the fish is either frozen, or parasite free fed.

It's a great experience to go to a nice good quality sushi place and try it. As a universal law, don't buy gas station sushi! Look at reviews, 4star and up, with at least a few hundred reviews. If you're far away from imports, like in a small town in Utag, probably going to be hard to find a sushi place like that. But if you're visiting New York, LA? Any big city, there'll be good sushi to try.

    In fact, he is completely wrong. In the US and Europe, sushi fish are legally required to be frozen and then thawed to kill parasites. This makes the risk of parasites virtually zero. And in other countries, it is actually very rare to get a parasite from sushi. Various safety procedures, chef education, characteristics of each fish, and characteristics of the distribution process prevent risks. Japan and South Korea are the world's largest consumers of sushi, both of which have strict food hygiene standards. Some of their food hygiene standards are higher than in the US or Europe.

Dr Youn should’ve differentiated them. and everyone knows there are risks with eating raw or undercooked food. that doesn’t stop people from eating rare steaks. or even raw meats like steak tartare. but everyone knows you should go to reputable, clean shops for these raw foods. everything we eat has a risk. even too much water is dangerous.
      educate people about what to look out for, where to safely get sushi/sashimi. no need to outright create fear. sashimi is the only thing i have cravings for but i don’t have it often. i make sure i only eat high quality sashimi from clean, cold, reputable, high volume places.

      I've eaten the sushi for years now, and I only got sick once because I didnt see the time is was made was at like 11:00 am and I had bought it at 8:00 probably ate it around 9:00 so I basically left it out too long exposed to a warmer temperature. That was my bad and otherwise I've never been sick from Sushi properly prepared. But yes, I would only eat sushi from places I trust, maybe not the gas station lol

    As a sushi chef myself. We have very strict standards (traditional and from the FDA) that makes getting parasites near impossible if they are following said standards. The reason it takes so long in Japan is two-fold, first is tradition. Traditionally it takes years just to learn to make rice let alone to touch fish. Second, Japan’s health standards (depending on location) can be very strict to almost negligible meaning good training is, realistically, the only thing keeping you from getting sick. Juxtapose to the US, we have very strict standards that get even more strict every year all the way from local health codes to federal FDA standards. That’s why majority of food sold in the US is processed or ultra processed.

    Seems a bit extreme to completely quit sushi just because the raw fish options MIGHT contain worms. Even if you don't want to risk it, just eat tamago, inari, unagi, etc. instead. There are plenty of cooked and non-fish options out there, even without reaching for "inauthentic" sushi (although, I absolutely love cream cheese maki 😁).
    It almost feels a bit ignorant to act like sushi is just raw fish.

    This is why I only consume sushi at very reputable establishments where you can be confident the fish is *very* fresh and care has been taken to be sure it is quality. I *LOVE* sushi, but there is no amount of money that could get me to pick up one of those grocery store sushi packs or a restaurant that doesn’t have an excellent rep.

Nevertheless, I would consider flash frozen, sushi-grade seafood which has been handled with care, stored properly, and served within an appropriate time frame to be “fresh.” There are some purveyors of sushi who do not have good practices in terms of care, storage, and handling of fish. I would consider these establishments to be serving food lacking freshness (to put it nicely). 🤢 Hope this clarifies for you.

    In Sweden it's become popular to make sushi at home. The recomendation is to freeze all fish that you use for at least two days before consuming raw. The parasites die from that. I'm pretty sure that the restaurants do the same considering the problem is non existing here.

      Personally, it seems to me that eating sushi at home would take away from the cultural experience. Honestly, it’s just not the same without experienced chefs (itamae) presenting their craftsmanship at the sushi bar and of course the cultural and social atmosphere.       Us Scandinavians don't have to worry that much about the worms though the institute for ocean research here in Norway found that oral treatment given to the fish to deworm them frequently kills most of the worms in farmed salmon and herring, the rate is ofc much higher in wild salmon.
      The main issue for fish farmers here is the parasite lakselus not really the worms but still to be on the safe side it's always good to follow the recommendation for preparation for raw fish no matter what type.

      I work with sushi at a local supermarket. I remember some guy in front of the case outside my workstation telling his wife to avoid getting sushi because he had a bad food poisoning experience. I asked him why, and he told me he got sushi from the gas station. Had to tell him on the spot, that’s why you don’t get sushi there, and his wife died laughing.

    I just want to inform y’all as a Japanese person, that this is not a matter of removal skills but of product management. The parasites shouldn’t be there in the first place if the fish is fresh and managed in proper temperatures.

      I used to work at a sushi place as a server. The chef would always have to remove worms from certain kinds of fish, even though we had top quality, safe fish. It was a somewhat high end restaurant. Some fish simply will have worms, as it’s a thing that happens naturally during their life. Tuna is a good example of this- almost all tuna have parasites. It’s just nature.

      @@christiepopify Well, it’s safe, so I don’t think it’s rational not to. Also not all sushi is raw and not all fish gets parasites. Plus the vast majority of parasites that could be in fish can’t actually survive in a human gut environment so they won’t make you sick.
      Don’t give up on sushi just because it sounds gross. You can avoid certain raw fish, plus the parasites are taken out so it’s not like you’re eating them, but even if you do they probably won’t make you sick.

      What are you talking about? Fish get parasites while they're out in the ocean. It has nothing to do with the price tag on the fish or how it's stored. The fish either gets it or it doesn't, and you have no way to know until you start cutting into it. 😒 Of course, there are many kinds of bacteria that can and will grow on poorly handled food of any kind, so while that IS important, it isn't because of the parasites.

    Flash frozen, it's a thing. I've never gotten sick from Sushi/ Sashimi. Not once, and it's still my favorite food. That being said, I still will definitely not buy it from a gas station

    Anyone experienced in Sushi making knows that the best practice for safely making sushi is freezing the fish first to kill and parasites. The only time fresh fish should be used is if the fish is wild caught and handled by someone experienced.

    I’m glad I live in Japan. Most of our Sushi Chefs train for years to make the best food they can. Of course, there are exceptions but the food is very good.

    I’m japanese, eating sushi on a daily basis for over 20 years(the ones you get at the supermarket). Never had any problems.

      Sushi in supermarkets is one of the safest types of sushi since they're properly frozen to kill Anisakis (under -20 degrees Celsius for at least 24 hours) before being processed. Major chain sushi restaurants are also very safe.
      But if you visit local restaurants, then you might have a chance to get Anisakis, no matter whether they're expensive or not. If you are Japanese, you see some news about celebrities who got Anisakis by eating raw fish once every few years.
      Well, stopping eating sushi completely for safety, like this guy, is facepalming. Just choosing the right restaurants that properly kill parasites is enough, even if you're very worried.

      @@Michael-fc4hc If you got anisakis from a sushi restaurant in Japan, then that restaurant did not properly procure safe fish (flash frozen to kill parasites) and the sushi chef was not properly trained because real sushi chefs are trained to be able to spot parasites and discard any fish infected with them. You shouldn’t worry about contracting parasites in Japan as long as you are not going to some back alley or disreputable restaurant. You are more at risk of contracting parasites at sushi restaurants overseas than in Japan because the training requirements to become a sushi chef outside of Japan are not as stringent.

    I've eaten 🍣 Sushi and Sashimi for most of my adult life and NEVER once did I get sick from eating 🍣 raw fish. In the last several years, I have bought discounted 🍣 Sushi from a popular Sushi Kiosk at ShopRite many times to save money on 🍣 Sushi. I NEVER once got sick. 🍣 Sushi is generally safe to eat.
