where I used to work we'd make bacon jam and I always wished I had gotten the recipe. Food wishes is nice but it wasn't the right recipe because it was missing the coffee. This is the recipe, or at least close enough to what I remember when I glanced at it. This stuff is delicious!
i dont think anything survives well in the freezer, but ive never used a vacuum sealer before, so that might help. as for canning, there is a high meat to vinegar ratio in this recipe; even canning meat sauce can be dangerous without enough acidity to kill harmful bacteria. im a novice canner, so i wouldnt trust myself. however, canning it and storing it in the fridge (after letting it cool down completely first of course) for a few weeks is probably a great idea!
Shoshy Alharthy. No it needs the bacon. If you can't eat pork closest thing would be pulled beef or pulled chicken, though that isn't even a close cousin to bacon jam! Yum! It can't safely be canned or jarred at home so plan to make it and use it within a short time just as you would any other cooked meat. Any product sold as bacon jam has had a major change (and probably taste) to a recipe like this. The name jam does not mean you can keep it as long as a jar of jam in your fridge.
The Zoologist . The flavor a of sweetness goes particularly well with pork. Try one of the other bacons but doubtful you will get as good a flavor. I have tried a couple recipes that had added sweetness to round the flavors. With pork or bacon they were great! With beef or chicken they were a waste of food. Ugh!
Coffee is used in a lot of barbecue recipes. You won't get a distinct coffee flavor because it blends with all of the other ingredients and you get a deeper flavor overall.
Helene Andresen. Yes, simmer it on very low in a heavy pot but don't leave it. Stir frequently or it will scorch from all the sugars. It will take quite a while, but the advantage is that the favors will bloom even more.
coffee sounds weird, but it adds a lot of depth of flavor to the jam. with all the caramalization and sugar and maple syrup, it's very very very sweet, the coffee compliments the smokey flavor of the bacon and brings it out again so the jam is rich sweet and savory. Unless you can't eat coffee for some reason, I highly recomend you consider it.
KayeZZ1: exactly. I bake specialty cakes and almost always add strongly brewed coffee to chocolate cakes for the same reason. It really deepens the chocolate flavor. :)
Keep it in a shallow pan on very low heat until the bacon and onions break down and become soft. You would have to be home to keep an eye on it though, whereas with a slow cooker, you don't have to. But it's still very doable. :)
It would depend on your stovetop and how hot your lowest setting is. But, being on direct heat will most likely cook it faster than a slow cooker would.

It could be canned in a pressure canner rather than a water bath canner.

i think it's a trend :) i first heard of bacon jam from brothers green here on youtube i think a couple years ago.. trader joe's also sells it jarred.
I'm pretty positive it's been a thing for a while, even before Food Wishes and Brothers' Green, just not gaining complete mainstream popularity.
