I always use your recipe when making tachchin for my Persian boyfriend, thank you!! We use vegetarian chicken (What the Cluck brand) and don’t have to change anything about your recipe. I also fry with sugar some rosewater soaked slivered pistachios and soaked dried barberries and put them in a ring around the top to garnish and add extra flavour. It has helped me to impress his Persian friends 😂😂
I made this today using your recipe. The only difference was l put in a buttered glass dish and put in the oven at 180 for 1.5 hours. Amazing! The king of rice dishes. Thank you.

it is 1 and 1/2 hrs but depending your stove it could even be ready in 1 hour just keep an eye once you notice the edges of the rice look dry it means it's ready

If you use a rice cooker, it'll stop working when the water has evaporated, so you have to wait a few minutes and turn it on again. But on the stove, you should use a non-stick pot and put it on the lowest heat. As for rice cookers, you can buy the only Persian rice cooker available in some markets, called Pars Khazar which regulates how crispy you want the bottom to be and unlike other rice cookers, you don't have to turn it on twice or three times to get the crispy bottom.

I will try with my modification, chorizo and peppers with the chiken instead of barberries, curry instead or turmelic
