I have a very interesting question for you: How much should you charge a company if you are leaving it yet they want you to fill the same role doing all the same work but as a consultant?
Sound more like contracting than necessarily consulting. Consulting is the type of work rather than the work situation. That being said. Because you are likely coming from a place where they expect hour delivery rather value, it would be unlikely that they would accept a value based arrangement. You could perhaps look at a monthly retainer to manage the same sort of work, then if you can get it achieved faster them the rest is profit. I would raise my fees to at least 50% above what you were earning, but that is just a starting point. The other option is don’t agree to this offer and find another more valuable one.
