I cracked up when you called Pensacola a little town. We live out in the country and drive 50 minutes to Pensacola to do shopping. To us Pensacola is massive.

100% agree with everything you said. That being said, my favorite is George Bistro on 9th, hands down. Away from downtown (but officially in the city limits). Also, the wife and I like Alice's Gulf Coast Cuisine on the west side of downtown. We can walk there in 5 minutes!
I worked at George's for a while. I'm a chef. Decent spot with some really skilled people behind the scenes in that kitchen.
I had dinner there on Friday! Only place in town I know that serves bone marrow. I love it!
George is the best I've had in the Pensacola area.

It's so Pensacola mentality to refer to as "fancy". Says EVERYTHING. Going to feel very overdressed if take it as big city higher end. However there is the good old Southern tradition about having some very good food. In that can aim for similar to important cities of The South, especially New Orleans, and probably Atlanta.

If you like Iron-which I totally agree, they’re incredible-you must try Troubadour, you’ll love it. They do a set menu, so check it out online before you go to make sure you like it.
I also agree with another commenter saying Alice’s. I actually prefer the bar side, especially when there’s life music. The Pattis provide the seafood as it’s their place, and they have a table in the back. If you like oysters they do a great price on them on Wednesday’s.
Jack, I love your choices, however, what about Jackson's? Have you ever eaten there?

I've never eaten at any high end restraunt before unfortunately.
I ate at red lobster a few years ago and paid 160+ tip for me and a girlfriend and we both had two drinks one with our appetizer and one with our meal 🤷 pretty ridiculous I thought for a crummy franchise! Red lobster is garbage as far as a seafood restaurant is concerned imo.
Red lobster is overpriced fast food. I worked there. There's basically no skill required to work in the kitchen. Most everything is done by microwave except for the obvious items and it's all done by the system, the system just tells the workers what to do. No opportunity for employees to use their creativity or expand their skills.

The District takes the cake. They’re kitchen was built around their 1000deg oven that was made for cooking steaks to perfection. The lobster risotto is to die forrr!
