Others don’t believe that coffee can be any good unless it’s bitter and amend their coffee with chicory or dandelion root, roasted, to ensure the bitterness. There are a number of additions and substitutes for real coffee, but as far as I know (not far) they are all bitter, and some are medicinal.

Danny and Wanda a good tip I learned a few years ago is to clean out the coffee by pitting in a piece of bread and make bread crumbs. It not only cleans the grinder nut absorns the odor of what you had in it. You're welvome!!
Interesting, malabar would be good. One of my all time favs was a "monsooned malabar". Sumatra is a stronger coffee and guessing its a better balance for the pecan smoke. Fun imagining the taste and what a fun project! Wonder what roasted pecans-coffee beans (roasted and ground together) would taste like. Upping the pecan flavor?
I was wondering how they could get pecan in the flavor. Maybe smoke together, then separating before grinding the beans. When they suggested smoking the coffee with pecan wood, my mind automatically went to the pecan flavor. I could go for that!! Bacon flavor sounds intriguing too!

Good morning you Danny and Wanda and Chris. I love coffee. I mix a pound of Luzianne and a pound of Maxwell house medium roast together and its strong but its good. I put a pinch of baking soda in the pot so its not bitter. No matter how you like your coffee its good stuff.

After I grind the beans, I turn the unit upside down (holding both pieces together) and have all the ground beans go in the cup instead of the grinder. It's easier to scoop out your measurements. I also use a small brush to get the rest out of the grinder and savor each and every bit.
This is a great experiment. I do like to put heavy cream in my coffee, but a really good coffee should be one you can drink black and not have a bitter aftertaste. Plus, anything that smells like bacon is a winner for me.
I like coffee on the darker side. When I watched the coffee being poured out I said, "Nope, not gonna be strong enough for me." Thumbs up on another good video.
Your " set up" at Pecan Grove is a great way to live. The smoke house, cane syrup boiling pans, barn, prepper shed, and beautiful property make me smile. And, drinking good coffee with beans that were roasted in your smoke house couldn't be better. I genuinely love good coffee. Lee

I love my coffee and I do not doctor it up either. I want to taste the coffee not the fixins. I prefer to grind beans myself and do like an expresso grind. Those coffee sounds amazing. I enjoy coffee made with sumatra beans. Interesting process. Have a lovely day.

It's great you smoked the different beans and then did the taste test. This is kind of exciting that you did this. If you decide to do more of this to sell will you sell the beans and not ground. The beans last longer than ground so would love to get some from you if you do this in times to come.

Somehow through life, I seem to have turned into a coffee snob. My favorite is a lightly roasted mocha java blend. I call starbucks, starburps. You got some nice beans there to start with. I used to enjoy dark roast coffee.. but after a house fire, not anymore. Even medium roasts are a little charred to me now. According to the lore, Sumatran beans tend to bloom heavier than the rest. I kinda prefer the Indonesian beans to the Indian beans. They're close but I think it was the creamier body from Indonesia that hooked me. I really like the Tanzanian peaberry coffees.. low acid, smooth heavy body, none of those wine notes like ya get from Ethiopian beans. I love bacon but I don't think I'd love smoked beans.

If I’m going to drink coffee I’m going to drink coffee and not all this fancy flavored stuff. My grandmother used to make “cowboy” coffee by cooking it in a pot on the stove and I’m not talking about a regular coffee pot/percolator either.
If Miss Wanda likes the strong coffee flavor, then why doll it up? I have to add stuff to my coffee if I drink it to make it less bitter & taste good. Can't stand tea either. You have to grind it a little finer and make your coffee in a French press to up the flavor

Bitterness can come from over roasting over perking and several other things.
