Im not an animator so this could be not impressive at all, but something that stands out to me is how when beans get punched they ragdoll to the ground, but the animation of them standing up starts from their ragdoll position and looks fluid and natural. Its most noticeable at the beginning of the Jet Bean fight. So either Jeff animated a "ragdoll" himself and made it look natural, or he actually let them ragdoll and took their end position and made it flow seamlessly into them picking themselves off the ground.
This would be more impressive in a game, where ragdolls are always different because they're simulated in real time with the engine's physics, but in a movie the ragdolls are baked in, so it's just a like you said, he animated from the end position.

The camera-work, cinematography, fight choreography is off the charts here. Even if he’s dodging bullets from 2 feet away, this is what the people want.

As an action movie I genuinely enjoyed this. There are a lot of terrible animated movies that can't even be shitposted, but this one just purely focuses on intense action (just like john wick) unlike those "animations".

As an action movie I genuinely enjoyed this. There are a lot of terrible animated movies that can't even be shitposted, but this one just purely focuses on intense action (just like john wick) unlike those "animations".
