  • I already showed you how to cut artichokes. Now I'm going to show you how to cook artichokes, Italian style. With a stuffing made from breadcrumbs and parmesan, you stuff these artichokes are much as you can, bake them, and make a little pan sauce for dipping, and you'll never make another artichoke recipe again. This is my Baked Stuffed Italian Artichokes.

    I've been making stuffed artichokes for decades but I taught myself long before TH-cam came along. But when I watch you cook I see so many fine points of technique and thoughtful little touches, like frying the parsley, and it makes me wish I had worked in a professional kitchen.     You should do a tour of TH-cam channels where all those wanna be chefs stuff their artichokes without removing the feathery centre. Some don’t even wash them to remove bugs or grit before stuffing them. Wise them up.
    My mother would add minced meat to the bread crumb, cheese and parsley mix. A whole lot tastier. And like you, would add the tender part of the stalk.

    Oh my goodness, I've been looking for a good, simple recipe for stuffed artichokes. My friend's mom growing up used to make these and I absolutely loved them. I've been craving this so much. Love this recipe!!
    Also, love your style! The music is great for cooking but doesn't overpower what you're saying. So excited to have found this vid and your channel

    This was literally my childhood right here as well, growing up in Brooklyn. I remember among many things.... stuffed artichokes and veal cutlet. Apparently, it wasn’t a expensive I guess when we were younger 😭❤️

    Love stuffed artichokes. You make them almost exactly as I do. (Sicilian) but I make six at a time and I add 2 cans of anchovies that I chop up finely and mix it in with the breadcrumbs. Delicious.

    I love, love artichoke. I’m Italian, Siciliano. My grandmother and Mother, made them for Christmas, and Easter. We loved them. Now I make that as often as I can, when available in local stores. My Mother made them 2 ways. 1. Stuffed them with a combination of virgin olive oil, chopped garlic, chopped celery, chopped Italian parsley, black pepper, and Romano cheese. She would drip it by the spoonful into each leave, pouring the remainder over the top. 2. Bread crumb version, would be breadcrumbs, with granular garlic, black pepper, chopped Italian parsley, virgin olive oil, Romano cheese. Stuffing each leave, pouring the rest over the top. She would cook then in a pot with salted water and olive oil, half way up the artichoke, very low simmer covered until you can pull a leaf out easily. I would save the brine, make soup with it. She would leave on the side.♥️♥️🙏🙏🇺🇸🇺🇸

      NOT ANOTHER COOKING SHOW Just watched it again, man - great stuff! Just wondering - did you shoot the majority of the b-roll, even when you're in the frame, in 120, so you could speed ramp it?
      I'm working on telling stories about overcoming my stuttering and helping others to do the same, and it's awesome how using smooth slow motion helps give context to the story. But I really like how you're able to both speed up and slow down in the same take. So does that mean that you've, for instance, shot a 30-second (real-time) 120fps clip that turns into 150 seconds when conformed to 24fps, and that you can then play with the speed to make it both slower and faster than 24fps on the timeline? Just curious - hope that makes sense... Looking forward to seeing more! 🙂

      Yes, I one my A camera shooting at 24 FPS then my B camera not at 120 but 60 fps. I don't have a Camera that can really shoot crispy 120, but my canon 5d can do a 60 fps really nicely. And yes, I mainly speed up my A camera, never slow it down, and then speed and slow and play and normal speed for the B camera. Thanks bud! Appreciate you.

    Ok, it is xmas 2023 and i am looking all over for my moms artichoke recipe ...I know it but ....so this is after three hours of videos and this is my moms but she adds mozzarella in some of the leaves, but I think she does that last ? I owned a food truck a few years back with my brother who’s graduated top of his class at the French culinary institute, so I picked up from him and taught a lot myself and practiced.     Can you please tell me what pan you're using there? It looks non-stick but you're using metal on it?

      For the breadcrumbs? It is non stick, you have to make sure you don't touch the nonstick pan, I was just using the utensil to gently stir it a bit. I didn't have anything else at my disposal and trapped between camera's and lighting. Use a spatula or wooden spoon if you're going to use non stick. Do as I say, not as I do. ;)

    I made this tonight. Was dry. Breadcrumbs were very dry. Stems were hard and hearts were too. I have a fairly new oven. Thinking it needed to be on 350 instead of 400. One thing i like about steamed is the breadcrumbs moisten a bit more. Not sure what i did wrong. But it was not a hit. I did like the sauce tho.

      If the stems were hard, they need to be cooked longer. And if the breadcrumbs were dry you could baste it. I hate recipes because so many variable change it from kitchen to kitchen, I don’t want to teach you a recipe, I want to teach you how to know when an artichoke is cooked and when it’s not. And when you see following my directions isn’t working, you’ve got a basis for troubleshooting. The recipe doesn’t matter, the technique is everything. I’d try adding more stock to the pan. Cook until the stems are fork tender. Cover if needed. I made this video very long time ago. I have a totally new format for the videos and so I apologize this one wasn’t up to my current standard.

      @@NOTANOTHERCOOKINGSHOW TY. Makes sense. Tried something new instead of the ol steam style. The top of the crumbs started to brown too. I had the lid on. Only thing i could think of was putting on a lower rack. Maybe that was an issue. I wasn't knocking the recipe. It looked good and it smelled real good lol. But now that i have some troubleshooting i can make sure i know what to look for. Appreciate the follow up.

      @@ca3317 anytime man! The problem with improving over time is that you have to look back on videos like these with regret at all the things you could've done better. I appreciate the feedback without being rude as can be customary on videos like this. I hope you find more success with my other recipes. Always let me know if you run into any issues!

    Oh man I love your video work and can tell your skills are v good, but am bummed that this was the first recipe i tried. Took 2 hours and had very little taste plus was difficult to enjoy / embrace what was supposed to be going on.

      I followed every step verbatim. Is it possible my artichokes were not ripened? Watching the video again, yours looks much softer and slightly more opened to begin with. Also, I cooked them for 40 minutes, tried a peel and it was too hard to rip and bite. then put back in for another 20 minutes and still was difficult to rip, but I managed to get a hardened bite that masked the flavor of the artichoke completely. Another possibility : I didn’t cut off the stem enough so the bottom leaves i was trying were a part of the stem, not the heart? Thanks again for offering your thoughts.
