fr I think at the start they might've been thinking about paring them up just cause their a group of 4 and Gray was shown to have a small crush on Erza as a kid when he saw her alone by the river, also in the OVA when Erza was telling kid Natsu and Grey to get up he was blushing. There was also some other moments like when they took a nap break and Grey realized how pretty she was and got crazy when Erza almost died protecting them.
This prob could've happened but tbh so many pairings are good, if Erza x Grey was canon i'd imagine Juvia she'd be paired with Lyon cause they're both crazy with love and even had the same idea with their magic. being complimentary. I thought that it was also said by one of the editors or maybe Hiro himself that originally he planned for Grey x Lucy to be canon but changed when Natsu scored high with being paired with Lucy by the fans
