Even making homemade extract, you would separate it into batches small enough to make you question it. Wouldn't you notice the batter being about twice (or thrice) as runny as it should be? Grandma got it handed down from her mom sometime in the 1930s, and used it for years before I was born, it got passed down to my mom, and it was being used right up to (and I have no doubt, beyond) the time I left home to strike out on my own. Wish I could find the same sort of covered ceramic/stoneware crock today, but no joy. Have to settle for a pint Mason jar. Not as handy (You've gotta unscrew the lid - a "takes two hands" operation, rather than just lifting the cover with one hand and pouring the fresh grease out of the pan with the other) but accomplishes the job. 'Taters fried up in bacon grease... YUM! And it's hard to go wrong frying eggs in it. Always loved taking the fresh, still-hot bacon grease and drizzling it on pancakes in place of butter, too.
