Stir-Fried Lobster Tails with Ginger and Scallion - Tôm Hùm Xào Gừng Hành

  • Ingredients:
    6 lobster tails(about 2lbs), chopped into 3 pieces
    1/4 cup ginger, finely Julienned
    1 bunch scallion, cut into 2-inch pieces
    6 cloves garlic, chopped
    3 Tbsp vegetable oil
    Sauce:
    2 Tbsp cooking rice wine, Michiu brand
    1 Tbsp vegetarian mushroom oyster sauce/ oyster sauce
    1 tsp sesame oil
    1 tsp chicken bouillon, Lee Kum Kee brand
    1 Tbsp sugar
    1 tsp black pepper
    1.5 cups chicken broth
    1.5 Tbsp potato starch (WEL PAC)/ cornstarch

    Love this recipe. I used to broil my lobster, but I much prefer this method now. After I cook it, the lobster meet is still incredibly juicy. I've made it at least 3 times, and it never disappoints. Thanks for sharing!

    I will definitely try your recipe this weekend. I love it because I don't have to kill the lobsters and coat them with corn starch, which is very messy and unhealthy when fried.
    BTW, six CANADA lobster tails at COSTCO is $42.23 (9/11/22) in Orange County, Southern California.
    I love the INGREDIENTS in the COMMENTS section because it saves me time.

    Best lobster I ever had was chopped up and wok fried in XO sauce. At first glance I thought WTF??? But man, oh man it's good and the dipping sauce they gave me was fantastic for seafood dipping, it was Chinese sweet red vinegar. Hard to find, has to be the sweet type, but it's hugely more healthy for us than dipping in melted butter since lobster is already a rich cholesterol containing food. Perfect for dipping crab and fish too. The chopping offers more meat from a given size of lobster, so easy to pick free from the shell fragments. But it is a real shock the first time an American is served lobster this way. Trust me, try it!

      @@ianscianablo8507 A search will reveal many Asian red vinegars. Some are not sweet but you need the sweet component for dipping heaven. I found one from an Asian mail order supplier who has since shut down, Amazon and Walmart probably has it at a higher price, try Ranch99 or H-Mart mail order Asian food sellers. Lee Kum Kee brand Red Vinegar Seasoning is not quite as sweet as the first one I had but it is an excellent low cal alternative to butter.

    Do you think I can add in e-fu noodle to make it a lobster noodle dish like at the Chinese restaurant? If so, should I add any more seasonings? Looking to make a lobster e-fu noodle dish for my dad’s 60th birthday and this recipe looks best out of all the other ones and I’ve tried a few of your recipes already (amazing and trustworthy!)

      There’s no sake in my recipe. I used rice wine but if you don’t have it that’s fine too.

    That's the low cal version. The version I know involves coating the lobster dredged in starch, then shallow frying in oil...lol...cholesterol-be-damned!

      Authentic Chinese recipe, requires pre frying to keep the lobster juicy. If fried at correct temperature, should not penetrate lobster-not so bad
