There's no two ways about it. Banoffee Pie is GREAT! But it's a lot to get through, you know? So these Banoffee Pie Cookies are the perfect, single serving alternative. No stressful pie-tin-removal, no messy cutting. Much easier to share but with everything you love about a banoffee pie, just in cookie form! Give them a go and tell us what you think! INGREDIENTS
COOKIE DOUGH
220g cool liquid browned butter
100g caster sugar
150g light soft brown sugar
1 tsp vanilla extract
1 egg yolk
100g mashed banana
320g plain flour
1/2 tsp baking powder
1/2 tsp sea salt
1 tsp bicarbonate of soda
20g toasted milk powder
80g milk choc chips
80g dark choc chips
BUTTERCREAM
145g unsalted butter, soft
225g icing sugar, sifted
1/2 tsp vanilla extract
2-3 tbsp double cream
TOPPING
Dulce de leche, shop bought or homemade

Not sure if you have a Coopers Hawk Restaurant near you, but they have an amazing banoffee pie. As far as I know that is the only place at least in Michigan that has it.

I just made this cookie today! It tastes great , but with buttercream and dulce de leche is way too sweet.
I’d skip the buttercream and try whipping cream instead, with a drizzle of caramel on top.

Also thank you for clarifying about the quantities of the burnt butter I was wondering when I was making you almond biscotti if it was the amount in actual browned butter or in butter before browning as they variy in quantity this video made clear though! Nevertheless I made the almond biscotti with orange curd for Christmas and they were lovely!

Hey Jem, brown butter is as called Ghee in the other part of the 🌎 there's a lot of receipes in India that uses.. Not just sweets, Ghee is an integral part food, festivals, religious activities too... even a lamp is lit using Ghee!!

What is toasted milk powder? Is it something I make or buy?
Milk Powder is literally what it sounds like - you can buy it in most/all supermarkets in the long life milk section!

Dear is it 260 to 270 gm butter orr 220 butter... Make it clear plz
So it’s 220g of browned butter but because you lose water in the browning process and every butter is slightly different, I have a guideline of the amount of butter to start with (before browning). Hope that helps!

For Banoffee cookies you'd absolutely need the bananas unfortunately, although we do have many cookie recipes on the channel, so you could pick another one and use the topping from this cookie instead!
