Everything was going so well up until the potatoes going in.....depending on the potatoes you're using, you may need to cook/soften them for much longer beforehand. Otherwise you may end up going through the process and all this hard work and then ending up with a ruined dish because the potatoes are rock hard!

if that ever happens again, turn the stove for the curry off and separate the potatoes, put them in a separate pot and bring them to a boil then add them back to the curry and both are saved.
