Nebom, a tip for the pastry dough! A thin layer is enough, best done with a brush of some kind. It gives moisture to the pastry, makes it very pretty and flakey, and gives a delicious flavor. The mixture should be on the watery end, you can even add some lemon juice for a bit of tang if you like!
