      기계에서 오래 돌리는게 정성이 아닙니다. 기계에서 오래 반죽을 돌리면 면이 딱딱해져서 실제 기술자들은 손으로 많이 주무르고 기계는 몇번 안돌려용

    반죽밀면서 덧붙이는 가루는 옥수수 전분인가요? 밀가루인가요? 한수 배우고 싶습니다. 감사합니다.

      반죽이 질으면 밀가루를 조금 뭍이고요 마지막에 바르는건 옥수수 전분입니다.

      반죽하실때 보니까 글루텐을 넣더라구요 그러면 쫀득쫀득 하데요

    중화면을 뽑는과정에서 자꾸매끄럽게안나오고 면표면이 갈려서 나오는데..날교체후이렇게 됩니다 혹시이유가 있을까요 ㅠ

    영상 잘보고갑니다. 그런데 하나 질물을 드려도 될까요? 제면기를 사용하여 제면 연습을 하고 있는데,, 모든 과정 후에 점점 얇게 밀어 마지막에 얇게 미는 과정에서 반죽의 겉 표면이 얇게 벗겨지는 현상이 일어나는데 혹시 이유를 아시나요? 덧가루(전분가루)를 뿌리면 벗겨지고 덧가루를 뿌리지 않은 상태로 밀면 잘 나옵니다. 해결방법을 아신다면 조언 구합니다.

      밀가루는 점성을 띄고. 전분은 분리를 시킵니다 적절히 생각하며 미세요

    밀가루 10키로에 소금이 120그람이면 짜지 않나요?
    어떤 소금을 넣어야 할까요?

      전혀 짜지않습니다 소금에 마그네슘성분이 필요하여 그만치 들어가는겁니다 종류도 상관없구요

      칼국수는 식소다와 치자가루를 빼고 물과 소금만 넣고 하세요.
