This dish is called Kanom Jeen Nam Prik which is fermented rice noodle (kanom jeen) and the coconut curry/sauce (nam prik). The curry is coconut and mung beans based with lots of herbs, kaffir lime and spicy chilli oil. Traditionally, it is served with deep fried veggies on the side. The recipe and presentation in this video though looks like a royal Thai cuisine dish with the shrimps and edible flowers etc. I love this dish. You have the curry that have a balance of sweet, nutty, sour and spicy flavours, and you get to eat it with the noodle and crunchy vegs! Perfect summer food.

After watching a soba noodle video this caught my eye. I love thai food. But this confused the hell out of me in the noodle making process lol. Did not expect the turnout to be paste squeezed through a tube. This dish makes me feel both gross and intrigued at the same time because of the visual combination of macerated paste like consistency paired with beautifully fried edible flowers, fresh herb toppings and colorful noodles. Love that it's traditionally authentic and looks absolutely delectable. Watching the video just gave me mixed feelings lol. Excited to try this in Thailand.

I had to come back to this video to write this comment because when they were cutting the vegetables and the sound of the rain I ended up falling asleep! ASMR 100%
The veggies are easy: Coriander root, galangal (ginger relative), shallots, garlic cloves, and kaffir lime. The sauces appear to be fish sauce, oyster sauce, and chili oil. The curry base is cocanut milk, and the crumbly cake was likely palm sugar. Im not sure but the toasted grains look like sesame seeds. And the crispy things are fried shallots.
