The Sauce is hoisin sauce and the wraps are mandarin pancakes. Normally peking duck isn't served like that. Its normally just crispy duck skin with very little meat on it. The meat from the duck is then used to make another dish like stir fried duck with scallions and ginger.

The rice thingie is actually made of glutinous rice wrapped with lotus leaf. It's usually steamed also and is very common at dim sum restaurants. And it's quite amusing that he ate it like onigiri style. We normally would pick up bits of it with chopsticks. I love this video! I love to see how Chinese food is interpreted in other countries.

Many years ago, we went to a Chinese show in China-town, San Francisco and had Peking Duck for the before dinner meal. They said to take the wrap, put the hoisin sauce on it, then put the duck on it. The skin should be very, very crisp and the meat should be moist and tender. I can't remember if there were any veggies with it but I think green onions may have been with it. The show, afterwards, was amazing.

Peking duck has many recipes. Usually you get a fast version in many restaurants. But a traditional prepared duck will be coated in sause and that needs to dry before roasting. Sometimes multiple coats. That can take a day to prepare. That is what makes it expensive. But also rare.
To eat 'properly' take the wrap in your hand or on a plate. Dip a piece of duck in the sauce and spread out out on the wrap (and repeat if the pieces are small). Ad veggies to taste. Fold into a pocket and eat with your hands.

    • @quinbloom439

+Ericsurf6 they make soup the gelatinize it, put it in a dumpling wrapper with maybe some meat, and then while they cook the dumpling it makes the gelatinized soup regular soup again. There is a soup dumpling place in Austin but I have never tried them, I hear they are really good though!

One way to serve Peking Duck:
    1) Get a piece of wrap.
    2) Put a piece of duck on it.
    3) Put some cucumbers and scallions on it.
    4) Spoon a little tar-like ( hoisin ) sauce over it.
    5) Wrap it up, fajita-style.
    6) Eat away.
In a traditional Chinese restaurant, they usually only give you 2 little plates of the sauce... for the ENTIRE duck ( to be shared among 5 to 6 ppl or more ). You'd never get your own plate of sauce like that... so ppl normal don't use it as a " dipping " sauce.... since the sauce goes inside of the wrap. =)

You should seek out Peking duck from a truly authentic Chinese place that specializes in it sometime. The skin would be thin and super glossy and crispy and a mahogany colour, with freshly made wrappers and house made hoisin-style sauce. Delicious! You'd love it! Probably a bit more expensive though.

It's interesting to see how other cultures alter Chinese dishes to fit their taste and presentation styles. Traditional Peking duck is served with a dark brown sauce called tianmianjiang which literally translates to sweet flour sauce( made from wheat flour and other ingredients). It is not eaten with hoisin which is a Southern Chinese thing.

I've never seen a chinese restaurant serve a salad before, but it seems it would be very refreshing after eating the fried foods ^^
