A little stock tip. You can let it reduce a bit to concentrate the flavor and put it into icecube molds, then when frozen put it into a ziplock bag in the freezer. Keep it a long time, and take as many cubes as you think you need.
If you don't have cornstarch, you can add regular flour at the same time as the paprika and powders, before deglazing the pan. The flour gets toasted and brown and it smells divine!
the skin is the best part to eat tho, would never through that in a stock hahaha ps, I find that cooking a stock for 4 to 5 hours is the optimal time to release all the flavor from the bones.
@@MtFoxt Fat soluble vitamins, vitamin E for example. Chicken skin also has more unsaturated fat that saturated by the way. And saturated fat isn't nearly the worst thing you can be eating.
An even more underrated food you can use is organ meat. Admittedly, some people find it disgusting and it requires a bit of knowledge to prepare, but it's very cheap and delicious if prepared correctly. It also offers a bunch of unique flavors to experiment with in various dishes and is quite healthy. I highly recommend trying it.
Top tip! Add turmeric powder to your chicken stocks. It adds that extra deep golden color to the oil and broth that you expect. It's not cheating, everyone does it. Making food look good and the way you expect it to look literally makes it taste better. In something as delicate as chicken soup, the mild flavor of turmeric usually comes through. It's also good for your heart and brain!
Oh I love breaking a chicken down and making tons of stuff out of it. Every time I get a rotisserie I’ll make a stock after butchering it. And then I’ll just have this bag of meat in the fridge to make whatever I feel like out of during the week. Best chicken hack I’ve ever learned
Hey Kwook, i am Shourya Roy ,12 years old male and live in Maharashtra, India, i am in 7'th grade but have a fascination for ethnic food and i am in love with your videos(i wish my mother-Sanjana, could make some different ethnic food but she apparently can't).Can you please please please make Aalo luchi dum(आलु लूची दम) or rice with a spicy gravy of potato and cauliflower (आलू गोबी की सब्जी). Both of them are easily 10/10, you lil fan's request. I wish i could mee you some day, i want to be a chef and you are my role model cuz you cook delicious food with ease in a simple way that i am able to understand and narrate it to my Mom..
The timing of this is very interesting to me. Babish just posted a rottiserie chicken video too - I think a day, maybe 2, before this one. I like that you call out your inspiration - I wonder if he got the idea from the same place. oh and by the way Bought your cookbook - first cookbook I've bought in years. I don't think I need it, to be honest - I already cook a lot and feel fairly good at it. But I absolutely love your approach to cooking and how eager you are to teach us all your tips and tricks, and I really really wanted to support you. Keep up the good work! You're awesome, Kevin
go to supermarket. go get a whole, uncooked chicken, get a decent knife and heavy duty scissors, seperate the chicken into its components: there you saved alot of money, and your meal options just expanded to include juicy, freshly cooked chicken instead of old, dry rotisserie.
My tip for straining stock is to pull out as many chunks as you can with tongs before pouring anything. That way you can panic and pour quickly if you need to 😅
Your voice is so pleasant and calming. I usually watch when I’m going to sleep and it knocks me out instantly. Having auto play on is the best Of course I also watch your videos when I’m actually awake and fully enjoy them lol I love the nonspecific directions “cook till it’s cooked” “boil for uhhh idk. Until it looks right?”. Best way in my opinion
My family uses the white meat to make chicken tostadas. Shredded chicken with some mayonnaise and corn chilled in the fridge for about an hour. Put it on a tostada with some hot sauce and it's heaven.
I have a bay tree in my garden and the flavour is so strong i legit have to take the bay leaf out after 10 minutes or it's like eating tree. Shop bought could never
you can definitely get away with the cheapest bottle of red wine you can find. i do that for what is an insanely huge batch cook of a spaghetti style sauce (it misses things like parmesan and all that so that i can use it for other stuff after freezing into portions ans add the right flavours when i defrost and cook it) and i can easily use half the bottle if i’m a little generous with it and it’s as good as a nicer red wine
I have been following you since you had 2-3K subscribers and you have definitely come a long way since then. I don’t know if its just me.. but it seems you’re having a hard time with your mental health. Maybe its imposter syndrome or something but I hope it gets better ❤❤
rotisserie chicken is the hero for quick meal prep. I use mine for making curry. After I separate the meat, I make a stock with the bones and use that for the curry. I add chicken at the end.
1:03 this bone is a wishing bone no? you and someone else pull on the opposite sides and the person who has the whole bit intact after pulling gets lucky
I have an endless Taco Bell taco hack. Buy one soft taco and a bag of tortillas and cheese. Every four hours or so you’ll get a fresh new taco with the same ingredients.
A little stock tip. You can let it reduce a bit to concentrate the flavor and put it into icecube molds, then when frozen put it into a ziplock bag in the freezer. Keep it a long time, and take as many cubes as you think you need.
That's brilliant, thanks!
you're genius my man/dudette.

Who the hell throws away the skin? That’s literally the tastiest part of a fried chicken. Even using it in a soup is sacrilege.
I live in (somewere in south america) Everyone eats the skin its the best part of every meat
Sometimes people think it's gross and when it's fried chicken that means most of the grease is there
@@aaron-gz yeah, the grease is what makes it so delicious.
@@mastermachado todo mundo sabe que é o Brasil
chicken skin makes the stock taste incredible I'm sorry - also baking them in the oven makes them crisp up incredibly for a perfect soup topping
Oh hey the video is 7 minutes long…That’s like 7 Kwoowk shorts let’s goooo!
He found out that the mula is found in longer videos

Worst part to eat health wise though so much calories in those fucker and not getting you full even after you eat 1 chicken worth of skins
@@MtFoxt
Best part health wise, they have way more nutrition than most other parts of the meat.
@@C00kiesAplenty like saturated fat? What nutrition exactly?
@@C00kiesAplenty I mean if you don't have skin on, you can eat a lot more chicken + you get way more protein per calories.
@@MtFoxt

Or just a pinch of curry powder. If it is only a small amount, it is not enough to taste really curry, but it is a nice spice undertone.
This video was very funny, thank you for making me laugh 😅 normally i wouldnt click on a video with a headless chicken, but im glad i did.
Fall is back and with it this is much needed and appreciated
Thanks Kevin! Love when a video from you drops, hope you’re well 💜

Bro I just eat the whole chicken in one sitting like an animal. I rarely have the patience to cut it up
You are such an inspiration to all home cooks. Your casual addition of spices is so freeing to dedicated recipe-cooks
Not eating the skin is a crime
True I love the skin
If you don't like beetroot a good substitute for the chicken salad is red cabbage
Polenta with chicken (usually stewed/slow cooked) is a very popular and traditional dish in Brazil, especially in the South. :)
Tem muito valor. Em Minas é muito comum tbm
I love polenta ... I gotta try this.
WHO THE HECK DOESN'T LIKE THE SKIN?!
My Sister & I would fight over who would get the skin every time my Mom roasted a chicken.
It's only good when it's crispy. Once it gets limp you toss that shit out.
The skin is the best part. how have you not snacked it? 🤣
