Unfortunately the quality of beef and wood needed to do a proper Texas style smoked brisket is not available in Kerala. I bought my brisket from LULU mall in Trivandrum. Marbling of the beef is key. Another strong component of the flavor is smoke. Unfortunately Texas Post Oak wood which is ideal for brisket is not available. I am a Malayali born in Texas and have tried my best to replicate Texas style smoked brisket in Kerala with little success.
