This is probably a stupid question but here goes: when north, south, east and west were determined, the qibla was said to be in a south-westerly direction. Is that because they already knew from maps that the Kaaba in Mecca was to the south-west and the only problem they were solving was in which actual direction the south-west lay?

No it depends on the location of the city at which location is this city located and how many degrees and how many seconds

I think as long as the shadow longer than the pole, you can measure the east and west, and then you can find nort and south..
Yes size of the stick doesn't matter in this case but do use a stick which has a size enough to make the necessary calculations
How much jaya namaz should be put 60 to 70 degree if a minor difference occur will namaz happen?
Not more than 15 degrees approx to the right and left of the exact qibla
it is not very clear actually ...can i know every how many minutes he marks all the points ?
Time difference of marking the direction doesn't matter here but use a time difference that you mark enough to know the exact direction it shows
