MAKES: 1 pan of eggs (for 6 sandwiches of 2 eggs each)
INGREDIENTS
12 eggs
Salt and freshly ground pepper
A little cream or milk
1 cup give or so of add-ins (optional): shaved asparagus, peas, any veg really, rendered bacon or prosciutto or pancetta, herbs, melty cheese
6 rolls or 12 pieces of toast, for serving (optional)

That is so smart! We meal prep breakfast sandwiches or burritos for the week while we make Sunday brunch. I have never thought to just make a tray of eggs in the oven for those sandwiches!

My son 100% does that to my parmesan on purpose because he knows it bugs me. (Just because I know where he gets being a smarta$$ from doesn't mean I like it.😂)

I made this 2 days ago, it smelled so great simmering away. I had a bowl for lunch, it was so different you can really taste the peppers, I enjoyed it very much. And I have to say cutting the peppers the way you did, I will now have to make stuffed peppers, never made them but I think red peppers would be tasty.

Cut off the rind of the parmesan cheese and freeze it to put in your soups or spaghetti sauce while cooking.
Do you pull it out after, or does it melt?
You will probably pull it out. I sometimes cut it into small pieces before I put it in, they will soften up and I call those bonus flavor bombs.

Not enough eggs on that bun! Looks like I’ll be making this as a meal prep!
I tried this with a silpat, and since the eggs are a liquid, they flowed to the edges, and got under the silpat, to the bare pan that wasn't oiled...so I had eggs stuck to the pan, and sorta Silpat-stuffed eggs. Ha! I use pre-cut parchment sheets, so I'd end up with the same issue with the half-sized sheet pan like this. Looks like I'll need to try some non-stick oil/fat instead next time.
