If you notice, the color of the meat that bulalo is dark because it is a carabao bulalo. The the one in Tagaytay is beef or cow's meat. KABAWAN on their sign board means place of carabao (meat). KABAW is visayan term for kalabaw (tagalog) aka carabao/water buffalo.
*beef bulalo has pinkish meat.
