To get a reddish natural color for the quince, place the core and seeds removed in a pressure cooker with water just to cover them and cook for 30 min, let it rest overnight, next day strain the liquid to process the chopped quince and avoid the coloring at the end.
I made the same before,and it gave me the pure natural red colour but the only mistake i did was that i didn't add lemon juice ,which affected the quality of sugar by making it like toffee 😜

Water will spoil its shelf-life

Lemon prevents crystallization of sugar, and yes many varieties of quicnce turn dark red due to oxidation.
