I used a similar method to break the dormancy of canna seeds and had good germination rates! I wrapped them in moist kitchen towel and kept them warm in a ziplock bag. They took about a week to germinate!

I also use the moist kitchen towel method, its useful to be able to see what the seeds are doing. I use old takeaway tubs instead of ziplock bags because I find that when moving the bag it can sometimes break the roots of the more delicate plants.

Can I plant the sprouts in Aquatic Potting Medium instead of soil?

Yes, in fact using aquatic potting medium would be better than using soil.

I feel like plants are sentient because how could it know where the water is and search for it like that. 😅 i could be hopeful though.

    They are very invasive

They are in the tropics and warm temperate regions. Where I live they wouldn't survive outside so I'll be growing mine indoors or in a polytunnel.
