    To everyone worried about fresh vegetables during the challenge: this is what truly local and seasonal eating looks like, especially in North America. You put-by (can, freeze, dry) or you go without.

      Not true. We are in zone 6, and I have carrots, green onions, turnips, rutabagas, kale, collards, radicchio, escarole, lettuce, spinach, swiss chard, mache, arugula, and more ALL winter long. Plus broccoli, fennel, beets, cauliflower, and other slightly more tender crops until Christmas at least. All you need is something to cover them up with, not a big fancy greenhouse or anything expensive.

      @@rik80280 I'm zone 6b, we get in the negatives in the winter, so I thought I couldn't garden in these months, but when the snow covering my crops melted a bit in the rain, I saw quite a few were still green underneath! Excited to attempt to grow in the winter 2022 😁

      So true. Tho depending on your space and/or green thumb, could always grow microgreens on a shelf or table with one of those clip on plant lights if you miss fresh too much! 😊

      Agreed. My husband would just look at me and say, "yeah, right" and continue to do his own thing. Any inconvenience to him feels like punishment *shaking head* It's no wonder my food bill is so high.

    I'm doing a no spend year except for paying bills and what's necessary. I'm building my finances this year. I'm going to live off my pantry as long as possible.

      We did this and were able to put a small down payment on a home. We are now home owners♥️ I'm soon to be 22, my husband is 30! Everyone thinks it's impossible, but doing no buy months DOES WORK.

    I store my onions using panty hose, tying off each onion so they aren't touching. They last a long time that way! I learned it from Alton Brown.

    I have a tip for you. If you put paper towels in your spring mix it will last so much longer. It absorbs moisture. I put sheets on the top and bottom. I also change the sheets out as they get moist. I use this for my spinach as well. I love watching your videos.

    One year due to my mom having a stroke, we didn't celebrate Christmas until the end of Jan. She LOVES Christmas and all the decorations so she came home the dec 26 so we just postponed it for a month so she could enjoy the holiday. So now, as an adult, (no kids) we celebrate holidays whenever we want.

      We have family scattered everywhere, and since Christmas travel can be so tricky we celebrate whenever it's convenient for everyone. I wish we'd thought of doing this decades ago.

    Honey, I'm not going to talk about why you might have been sick. SO, on to the next topic. I'm a southerner. I drink SO much water!!! I have all my life. Maybe that is why I never look for a way to make WATER taste better. Filtered water is my JAM!! NOTHING quenches my thirst better than pure water. Not Distilled. I purify my own tap water. IT'S AMAZING. Please forgive me. I don't understand why anyone wants to FLAVOR their water.
    I LOVE your videos! I hope in the future you tend to depend more on The Most High's medicine than anyone else's. Our Creator gave you a self healing body. Please don't discount that. Again, Love your videos and appreciated your comparisons especially on price. Much love from Tennessee!! ♥

    Keeping a full cleaning kit in each bathroom is life changing! We moved into a 2 story house last summer and I've never had a second floor bathroom...and hauling everything upstairs was a great inspiration to stay downstairs 🤣

      We have 3 stories including the basement. I go so far as to keep a vacuum on each level. I used to own a cleaning business & I can’t tell you how much I hated hauling all the stuff up & down the stairs. 😭😭😭

    I'm a Canadian born, brought up in England by British parents and now live in Australia with my daughter and husband. I have never eaten a sausage roll until I came to Australia.....i have since moved to a small rural town called Yackandandah in Victoria, about 3 hours from Melbourne and 4 hours from Canberra. There is a Pie Shop called Gum Tree Pies and they make the most delicious sausage rolls ever. Flaky pastry with succulent sausage meat, bursting with grated vegetables. 😋

    The lasagne you described is the only sort we have in the UK. Bechemel sauce and a red sauce made with fresh tomatoes. These layered with the meat and veg mix and lasagne sheet.

      Same here - i am german and live in france - i never came upon a lasagna that is not prepared with bolognaise and bechamel sauce. But i also see a lot of other differences with the US. For example the mozzarella cheese we use in europe is a ball shaped soft cheese, not a hard block of cheese that you grate. Even though i know ricotta cheese we only use very rarely here, actually the only recipe with ricotta i make is canneloni with a spinach ricotta filling. Also, i am always wondering about the parmesan cheese that is used in the US - i see it often kept at room temperature, we always store it in the fridge and it is best when grated freshly - another hard cheese we love to add to pasta is grana padano, which is similar to parmesan but made from sheeps milk.

    As an Aussie I’ve never had a lasagne with ricotta in it. We always have it with bolognese and bechamel sauce. Homemade bechamel! Sometimes I’ll do a pasta bake with the bolognese mixed through the pasta (penne, shells or spirals etc) and topped with bechamel and grated cheese! I’ve always been perplexed watching Americans make lasagne with ricotta lol

    Becky, Ricotta is simple to make. Heat milk, stir in vinegar or lemon juice. Strain on cheese cloth. That is it. I make my own for lasagna, stuffed shells or anything I need it for.

    I’m fascinated by this concept of “pantry challenges” only because that is how we meal plan all year based on our pantry and freezer. At the beginning of the month I check our pantry and freezer log to see what I have the most of and plan around those things, then I add in side dishes based on what we have, and then make a shopping list of things I’m out of. I do occasionally buy extras but mostly only what is needed to compliment what we already have

    Happy new years all. I would like to share a family favorite recipe. Mozzarella salad which I have to make in bulk. Step 1 mozzarella cheese any kind you like not shredded. Step 2 garlic two tbs. Step 3 one onion chopped fine. Step 4 basil fresh or dried two tbs. Step 5 hot pepper flakes two pinches. Step 6 salt and pepper to taste. Step 7 cherry tomatoes as many as you like. Step 8 olive oil at least one cup. Mix and enjoy. Yes you can freeze it. My husband is obsessed with this salad. I hope you try it and like it.

    For your sausage rolls I would recommend looking at Delia Smiths recipe, she is almost a national treasure in the UK, she makes a quick flaky pastry that is so easy and really buttery and crisp, it’s the only recipe I use , I only make them at Christmas because I tend to eat the lot 😂

    That Lasagna you describe is what a more traditional Lasagna is. People over the years tried to skip out on steps so the obvious cut was made at the Bechamel because apparently people think that's hard xD

    You could donate that flavored water to a food pantry. I have volunteered at our church food pantry and we have an "extra" things shelf for items like that. The pantry recipents enjoy extras such as that!

    Hi there. I just told my husband we were going to do a freezer, pantry clean out and eat what we had for next month. The only things I am buying are soaps, dish soap, paper products, etc that we need and some fresh apples and oranges. All else comes from what we have

    You'll love sausage rolls, they are popular in Australia. Every bakery over here makes them along with individual savoury pies and pasties. There is a national competition for the best baked goods woth categories for sausage rolls. Our Britich ancestors brought them over.

    Homesteading Family has a very thorough and amazing online dairy class! I make my own yogurt, ricotta, cream cheese and sour cream! I haven’t had the chance to make any other cheeses yet! This winter is a great time to play around with it!

    Cheese making is so fun. I have a hard of goats (23) and milked about 18 of them. Had a cream separator and made great cheese and yogurt for yars.

    Have you ever tried putting an onion in the toe of a stocking, tying a knot just above the onion, slipping another onion in on top of the knot, then tying another knot so that you end up with a long "string" of onions (like a good pearl necklace)
    Then hanging the chain in a cool dark place like from the ceiling/floor joists in a basement? This keeps the onions from touching each other and things that might transfer contaminants. My mom grew tons of onions and we'd spend a few hours tying them up. Then when you want to use them just cut under the knot above the one(s) you need.

    Earlier this year I decided that I was going to shift over to buying groceries from the grocery store once a month. I've been slowly stretching the time between grocery runs and have been building up my bulk stock pile, so just over a week ago I finally bought groceries for a month and will not go to the grocery store again until the end of January. I still will get my eggs and fresh raw milk from a local farm weekly though.

    I made mozzarella before 🤣 it was interesting to say the least so good luck. But Ricotta is the easiest thing to make and limit what goes in. I use whole milk and lemon juice. Heat the milk (2 cups) and before it’s boiling add lemon juice (1-2tbs) let it simmer don’t boil and it will start to separate quickly. When all the white has clumped (it’s not pretty), sieve threw a cheese cloth an hang over your sink. Give it a final squeeze after 10-15 min hang time. And there you have a soft cheese. Either make sweet with honey or add salt/herbs for savoury. It’s my favourite cheese making experiment 🥰

      Ricotta is my favorite cheese to make too. And I always freeze a bunch to use through out the winter when our goats are not in milk. Works great!

    With the index you should buy a Gallon Bottle and just refill your Windex bottles
    Unsure of your other cleaning products but buying per gallon is cheaper.

    You should start doing lettuce indoors they would actually grow before your two months are up. I grow it indoors all year round. You do need grow lights. You can grow lettuce and them cut some and it will grow back several times. I plant new pants about every 6 weeks so I always have fresh lettuce. I like it in the house so when I want salads then I just cut off what I need and it’s always fresh.

    Lasagna with bechamel sauce is how it’s traditionally made here in Australia, and sausage rolls are very common here too - most bakeries sell them along with meat pies warm and ready to eat!

    I have to say that even though Azure is cheaper there are other reasons I prefer buying what I can from them. Azure is an eastern Oregon company, many of their products are organic, and it just feels better to make my monthly order and buy from them. I live in Oregon. The quality of their grains, beans, and flour is amazing. I love the community atmosphere of a monthly "drop". You're there to pick up your stuff and you're there with like-minded people. I introduced my daugher in Burns, Oregon to them and the "drop" is walking distance from their home. If you are serious about not going grocery shopping on every whim, when you run out of something, a once a month "drop" is it's own discipline. In our world now you can get sucked into the anonymous buying experience and your $$ goes to places and people that may not be in your interest plus Azure is fun!

    "Hasselbacks potatos" is a classic dish invented at a Swedish restaurant called Hasselbacken (the Hazel slope).
    You take potatos, peel and put them one by one in a large serving wooden spoon. Cut slices as far down as the spoon lets you, thin slices. Put the potatos in a owen safe container with the sliced side up. Melt butter (the one you bought from Azure will be fine) and brush it generously over the potatos. Than ad salt and fine bread crums on top of the potatos. Bake in the center of the owen for about 45 minutes 225 celcius.

    my mother used to make cheese using lemon juice - never used or had rennet. her cheese was delicious. we lived on a dairy farm.so the milk was plentiful. she made everything - mozzarella, sour cream, yogurt, cottage cheese all with lemon juice

    I get your pain being sick at Christmas is no fun. I sent my husband to my daughter’s place Christmas Day. We did face time when the grandkids opened their presents. So totally didn’t miss out. Can’t believe you haven’t had a sausage roll before 😱😱 I make mine with puff pastry, sausage mince and good Italian sausage mince 50-50 mix yummmm serve them crispy and hot with tomato sauce.     I keep a set of cleaning products and tools in each bathroom, and the kitchen, plus a tote that I carry around for general all purpose cleaning of the rest of the house. So much easier. Also, in Australia we grow up eating sausage rolls, they’re delicious 😋

    You can store your sourdough starter in the refrigerator unfed for weeks (or longer)! If you ever need to go away again feed it a little and just stick it in the fridge 😊

    My whole family was sick on Christmas as well. I was the least sick so I cooked for us all while the kids and Grandkids napped on the couches all day. It was rough but at least we were together. I hope you and yours have a wonderful New Year! :)

    Hey Becky! I started my sourdough journey in spring 2020, with everyone else. It's still going strong and is my FAVORITE thing! I'm absent minded and never remember to prep anything so I do almost exclusively "overnight sourdough" stuff. It's awesome. It takes just a few minutes, which I usually do on my way to bed so it's ready to go in the morning. If you want to do your starter by yourself, that's cool! If you have trouble, I'm happy to share my "Flour Child". We are just south of you in SE Portland, would be very easy to pass along. Love your channel!

    Houseplants really like sparking water. So you can pour the peach into your houseplants but I would spread it out between lots of plants and only like every other water.

    It’s easy to grow salad greens in side, just toss a pack of mixed salad seeds in a foil pan. Cleaning stuff, dollar store! Most of my cleaning is done with a vinegar mix. I do have to say some ppls definition of frugal is way different then mine.

Your mom's infinite grocery list is something I need to actually build and customize for my various shopping needs, as soon as i've got the executive function to tackle it. Just like every sort of 'administrative' thing, I'll take forever to actually do the project because it feels like such a huge task, but then it'll make my life infinitely easier and save so much stress. 🖤 Hoping you and your family all heal up quickly and well with no lingering side effects.

      eep, nevermind, found it. Basically like my 'master' grocery list, but I have mine sorted by aisle, which worked great until they re-arranged the store. Grrr... First heard of this from Flylady, is great for not forgetting something that's needed!

    The carbonated water, if it’s sweet, you can use to baste a nice crust on your pork shoulder for pulled pork or ribs when you smoke them. I do that with extra sodas, carbonated waters, and alcoholic sparkling waters from after guests leave. It’s just an easy way to use it up and the flavors give the crust a nice little kick of taste 💕

    FYI, the original Beef Wellington was not made with puff paste (which sounds wonderful right now). It was made with a hard, inedible crust, which was intended to protect the filling ingredients. That crust was peeled off and discarded. I've made Beef Wellington in pie crust, puff pastry, and even filo dough, and they were all excellent. I didn't throw out the crust on any of them!

    I think I accidentally did this during the first lockdown. I did one big load the first safe chance I got. My family and I made it two whole months on just that grocery haul and what we already had at home. It made me realize a lot of things. Especially that my bi-weekly shopping trips were mostly impulse buys and treats. Since then I generally go once in one or two months and I cut down a lot on snacks and treats.

    My hubby passed from covid end of Aug..and I just didn't get joy from anything..but I'm getting back to what I love doing.
    I get the 5lb bag of Brazil nuts to eat 2 every day.get in the selenium..
    I would return that peach water or whatever it was, tell them it's not consumable, and not even worth the money! If I have gotten things and hated them ,and they let me return it no problem.
    A friend of ours for a function made individual beef wellies, and oh were they delish!

    Gurl you should rinse the can before drinking, I worked in warehouses back when young and packages go through a lot. I did the same idea for the bathrooms. I kept the original bottles so now I just buy the refill big gallons and Im contributing to less plastic waste.

    Hi Becky from Western Australia. If you want a bible for sourdough bread get the book Tartine. I’ve been making sourdough from this book for over 2 years. It’s really hard to kill starter so you may have been able to save it by removing the mould looking stuff and feed it again. It will be much harder to get the starter going in winter so it may take up to 3 weeks to get it ready to make bread. Just be patient and keep going. I’m originally from UK and Delia Smith has the best sausage roll recipe in her Christmas book. She makes a flakey pastry which is amazing. Never fail to be eaten super fast in my house.

    flour and water is all you need to get starter going again. (see Amy Duska's video from Little Spoon Farm) step-by-step super easy. Also grow your own sprouts in your kitchen.

    One thing you can do for "fresh" vegetables is to get more serious about sprouts. Very easy. You can grow almost anything and it gives you the idea that you have something fresh.

    I decided to do a quick price comparison between my pending Azure order and my local HEB and Amazon when I can't find something local. Just on chives I saved over $100 on a 4 oz package since the store is $25.38/oz. My eyes about popped out of my head!. All told, I saved $155.97 with Azure.

    Sausage rolls are basically pork mince with herbs and spices inside pastry. It can be puff pastry but also short crust pastry. Beef Wellington is pretty simple. If you wrap the meat in a crepe style pancake before you wrap the pastry around it it should help prevent a soggy pastry bottom. I oldo follow three rivers so im pretty excited to see what you both come up with for meals etc. Im sorry youve not been well enough to spend Christmas with your family. I hope you all feel better soon.

    Hello SoilSista I'm sorry your not feeling so well but this will soon pass! Pantry challenge sounds fun. We shop once a month and my husband is the same as far as snacks! Ha... But I bake alot weekly to keep his sweet tooth happy. My freezer and pantry are full to the top and we spent about 150-200$ a month in the grocery store. We grow so much and raise our own meat and now I make plant based meats which help alot in savings. Lol! This is amazing, I absolutely love your energy.     You can find recipes online to make fresh fruit concentrates. Get yourself a soda stream or something akin to it and go to town.

    For your cleaning products I 100% agree! It’s so much easier keeping things in every room. Be sure to keep the bottles and see if you can buy a bulk 2 pack jug from Costco. That’s what I do. It’s been a while, but when I counted it before I was able to save some money. Plus, less waste of tossing out perfectly fine spray bottles.

    Check out mozzarella cheese making in the microwave. But remember it is a 'fresh" cheese and needs to be eaten fairly quickly.

    Rumiano butter is the absolute best butter ever! I won’t eat any other unless I can’t get ahold of it. I usually buy the non organic ones, both salted and unsalted and they are equally as delicious as the organic ones because they are grass fed too. Unfortunately there is a production issue right now with Rumiano and they won’t have the regular ones again for a month or so. I had to buy the organic ones this month which is still totally worth it because there is no better butter than Rumiano. You’re going to love that butter! You’ll never go back 😄

    Those cans of peach stuff, you might be able to make it drinkable by adding it to soda water to tone down the sweetness.

    Have you tried growing spring mix in a bag of soil with a clear plastic tote over it? Roots and Refuge has a video from a couple of years ago on doing it. You may be able to have spring mix in the winter with out a grocery store. It worked well for us in January, but I live in the south 🤷‍♀️

    Thats how we make Lasagna here in Australia, white sauce and red meat sauce.. we also eat sausage rolls and meat pies.. You should give hassle back potatoes a try too, they are delicious...     It's interesting that you mentioned Beef Wellington. Laura in the Kitchen recently did a video on it. Do you put ham in your Scalloped Potatoes? Scalloped Potatoes with Ham is a casserole my mother did occasionally growing up; it would also be a great freezer meal.

    Try adding a portion of the peach juice in some strong black tea. It could turn out to be more delicious than Lipton's peach tea. I usually use the Simply Peach juice.

    Honestly the easiest way I have ever done sourdough starter is you mix equal arts flour and equal parts water in a jar. Feed for the next 7 days and is pretty ready to use a week after starting. The longer you feed it and keep it the more flavor it I’ll develop. Also the more protein rich flour you use the stronger the protein chains will develop.

    Becky, I hope you and Josh are feeling OK. I got concerned hearing your voice and “dry throat”.
    I have to tell you something that happened last night at my local Kroger… I was doing grocery shopping, and as I went down the aisle where they sell the AHA waters and seltzer‘s, things like that, there were two ladies that were loading their carts with the flavor that you love of the AHA sparkling water and both talking about YOU! Apparently they didn’t know each other they just happen to bump into each other as they were loading their carts.
    They giggled and were so excited to find the flavor you loved! Now I recently moved back to Texas from Washington State and I got such a kick out of hearing them so excited about you and your suggestions. I heard them say “Acre Homestead” a few times and I walked up to them, smiled and just said that “Becky would be so proud!😎” Oh my goodness they both squealed like giddy children, it was so cute to see.
    Darlin’, you are loved all over the country and I’m sure in other countries too!❤️❤️
